Meatless for certain, one of my sweet husbands favorites.

What You Need
2 pkg. (8 oz. each) Cream Cheese ( softened)
1/2 Cup sugar
1 tsp Lime zest ( only the green)
2 Tbsp. Lime juice
1/2 tsp. vanilla
2 Eggs
1 Pre-made graham cracker pie crust ( from your grocery store)
1 Cup thawed frozen whipped topping
Electric Mixer
Before You Start: Preheat oven to 350°
Lets Make It! In a large bowl beat cream cheese, sugar, lime zest, lime juice and vanilla with electric mixer on medium speed until well blended. Add eggs and mix until blended. Pour into crust. Bake for about 40 minutes or until center is almost set. Cool. Refrigerate overnight. Frost with coconut frosting, recipe below.
Frosting
1 (8 oz.) package cream cheese( softened)
1/2 Cup unsalted butter(softened)
4 Cups powdered sugar
2 Tbsp heavy cream
1/2 tsp Salt
1/2 tsp Coconut flavoring
1 tsp Vanilla extract
1/2 Cup sweetened shredded coconut
In a bowl beat the cream cheese and butter until fluffy. Gradually add the powdered sugar, one cup at a time and alternating with cream. Add salt, coconut flavoring, and vanilla extract and blend well. Continue beating until mixture is smooth and spreadable. Add additional confectioners’ sugar if necessary to thicken the frosting, or more cream to thin. Stir in the coconut. Spread evenly over cooled pie.
*Katies Tid Bits If desired, spoon toasted coconut evenly over frosted pie or top with whipped topping instead of frosting.

This looks so incredibly good and would be very dangerous for me…but I will hold on to this recipe and hope I have a reason to make it…KEY LIME PIE is one of my favorites and this looks so good.

They sell Key Lime juice in my market. I will have to give this recipe a try and then eat it all up.

Key lime is hands down my FAVORITE dessert!! I have never made my own pie before but I just might give it a try! Ohhh I bet toasted coconut would be delicious on top! Good suggestion
