Meals On Monday Ham Fried Rice
Ham Fried Rice
We had Chinese food this weekend, one of my favorites. You can make this yummy ham fried rice too. If you are feeling veggie? Just leave the ham out of this recipe. This recipe is perfect for leftover rice and leftover ham!
What You Need
1 Cup cooked rice (cold)
2 eggs (lightly beaten)
1 1/2 tsp Olive oil
3/4 Cups cooked ham (diced)
2 Cloves garlic ( crushed)
1/4 tsp Ground ginger ( fresh ginger is even better)
1 tsp. Black pepper
1/2 Cup frozen peas and carrots mixture ( thawed)
1 1/2 tsp Soy sauce
Non stick skillet or Wok
Before You Start : Prepare white rice and refrigerate for at least one hour
Lets Make It! In a wok ( or skillet) heat oil over medium high heat and cook eggs stirring frequently. Remove the eggs and set aside. Add the peas and carrots, cook for about 2 minutes. Add the rice, ham, garlic, ginger and pepper and stir well to mix , cook for 3-5 minutes to heat through, add soy sauce mix well and add eggs., mix well and continue to heat through. Taa Daa, so easy and delish.
Serves 2
*Katies Tid Bits* try adding a 1/2 tsp of chili powder to this yummy recipe for a little kick! Water chestnuts and mushrooms are often added at my house too.

Fried rice makes an excellent base for using lots of different leftovers and variations on this delicious dish.

I’ve done this before without the ham or the ginger. Girl, I bet this version is more than delicious!!! What a wonderful twist…I’ve gotta try it.

Yup…it’s the easiest to cook . Best is to use leftover/overnight rice. Taste better

I’ve never had ham and fried rice, but it sounds good! I’ve made chicken and fried rice, but my favorite is shrimp!
