I hope all of the Mothers and Mother figures had a wonderful weekend! I had a lovely Mothers Day starting with breakfast made by my sweet hubby and then working in the garden. We had a nice barbeque dinner at our daughters house, then our niece stopped by with her sweet new baby boy. It was a terrific day . Before I get started with the recipe for today I would like to apologize to all of the Thursday Favorite Things Blog Hop linkers. I haven’t made it to your blogs yet. 1 ½ Lbs Fish ( loin or thick fillets of white fish such as cod, bass, tilapia, etc. your choice)
1 Cup flour
1 tsp Baking powder
1 tsp Salt
1 tsp Pepper
1 Cup milk
1 Cup olive oil ( not extra virgin)
1/4 Cup vegetable oil
Large Non Stick Skillet
Paper towel lined plate
Potatoes (for fries, or prepackaged fries)
Large spatula or slotted spoon
Thermometer ( to maintain oil temp)
Before You Start: Prepare your fries, or bake according to package directions. While they are cooking make the fish. See below for simple fry making (chips)
Lets Make It! In a bowl combine flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is combined and the batter is smooth. Let the batter sit on the counter for about 15 minutes. Heat oils in a skillet over medium high heat until it reaches 350 ° ( use your thermometer to maintain temperature) Dip fish in the batter and let excess drip back into the bowl, dip again and assure fully coated and place in hot oil and brown for about 5 minutes on each side ( until golden brown) remove from oil using a slotted spoon or spatula and place on paper towel lined plate. Serve with hot chips (fries)
Katies Tid Bits- Make your own chips ( fries) you need 4- large potatoes, peeled and cut into fries, place in a bowl of cold water, Heat oil to 350° in frying pan, dry potato strips and place into hot oil and cook until golden, remove from oil with slotted spoon or spatula and place on paper towel lined plate.
