I hope you had a lovely weekend. Weather here continued to be “summer” like. I kept the cooking simple to avoid to much time spent in a hot kitchen. I hope you enjoy this easy (most of my recipes are easy, aren’t they) alternative to the hamburger. Chicken Burgers filled with yummy veggies and great on a bun or just straight into your tummy. I often mention that I may take a simple snap of the food I share with no special set up or props. Well today is one of those days. Not to mention my burgers look a bit dark in spots, but they taste delicious just the same.
What You Need
1 1/2 Lbs. ground chicken
1 Zucchini (grated)
4 Green onions tops and bottoms (minced)
1 Carrot (grated)
3/4 Cup Italian style breadcrumbs
Salt and Freshly Ground Pepper
1 Tbsp. olive oil
Buns, hard rolls or bread optional
Cheese (cheddar or mozzarella) optional
Nonstick Frying Pan
Lets Make It! Combine the chicken, grated vegetables, salt, pepper, egg and breadcrumbs in mixing bowl . Mix together until well combined then form into patties (makes six). Add oil to skillet and cook patties over medium high heat, until browned. Test for correct temperature using a meat thermometer.
Serve on buns, add cheese and condiments or serve just plain with a side salad.
