Asparagus with New Potatoes-
I think it’s time to play in the kitchen! Asparagus with New Potatoes is already one of our favorite “breakfast for dinner” meals. We love fresh asparagus and although we have a wonderful garden we don’t grow asparagus. I found some reasonably priced asparagus at the market and knew it was, “what’s for dinner”. I have heard some people say that asparagus is difficult to clean and cook. I ‘m sharing some easy tips about asparagus before we dive into the recipe.
When selecting asparagus -choose bright green stalks with compact tips. Do not buy any with dry or cracked stalks. Thick or thin stalks are a personal preference I prefer the thin stalks they are extra tender. But the thick stalks have a stronger “asparagus flavor”.
Do not- wash your asparagus until you are ready to use it. Rinse the spears under cool running water to remove any dirt/grit/sand
Store your asparagus- in a glass or tall container with about an inch of cold water in the bottom. Keep it on the low shelf of the refrigerator ( or above the vegetable crisper area) asparagus will stay fresh in the refrigerator for about 3 days. You can also wrap your asparagus in a wet paper towel and place it in a zip closure type bag.
You can determine where to cut the end off of the asparagus by bending the stalk until it breaks. Asparagus naturally knows where the heavy woody part is and it will break just above. Then use a paring knife to trim .
What You Need
8 New potatoes ( red potatoes, cleaned and cut into bite size pieces)
4 Pieces of thick cut bacon (cut into bite sized pieces)- I used nitrate free Simple Truth hickory smoked bacon
1 Lb. Asparagus ( cleaned , trimmed )
1 Clove garlic (crushed)
2 tsp. Rosemary ( dried)
1 tsp Black pepper ( freshly ground)
2 Tbsp olive oil
Nonstick frying pan
Spatula
Before You Start Use your vegetable peeler to peel all around the stem of the asparagus and cut into pieces.
Lets Make It!– Heat olive oil in frying pan over medium high heat, add garlic and saute, add bacon and cook for about 3 minutes ( until brown). Add potatoes, rosemary and pepper. Using a spatula turn to coat potatoes.Continue cooking for about 2 minutes. Add asparagus stir to coat. Lower heat to medium/low and cover. Stirring occasionally until potatoes have browned and asparagus is tender ( about 15 minutes) .
Serves 2-4

I never knew about putting asparagus in a jar with water! Definitely going to do that. My grandmother always said buy the thin stalks. I love this recipe – but I’m a saucy kind of girl when it comes to food and I think I would put either a Hollandaise or Mock Hollandaise sauce on it! I’m doing that for breakfast this weekend!
