Fourth Of July Cherries
It is a holiday weekend here in the US and it is time for some Fourth of July cherries! This time of year cherries are one of my favorite things. That reminds me, you can still link to yesterdays Thursday Favorite Things Blog hop too. Cherries are in all of the markets around here at this time of year. My sweet husband is from Michigan, where they have the Cherry Festival in Traverse City. Some of you may remember that I mentioned a while back that we plan to retire there ( please click HERE if you missed it).
I could make some of our favorite cherry recipes with cherries straight off of the trees!
Or maybe this new recipe for Cherry Macaroons from Taste Of Home (I am a Taste Of Home blogger)
Ingredients
1-1/3 cups shortening
1-1/2 cups sugar
2 eggs
1 teaspoon almond extract
3-1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1-1/2 cups flaked coconut
1 cup maraschino cherries, chopped
Directions
In a large bowl, cream shortening and sugar until light and fluffy.
Add eggs and extract; mix well.
Combine the flour, baking powder, baking soda and salt; gradually add
to creamed mixture. Stir in the coconut and cherries (dough will be
very stiff).
Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets.
Bake at 375° for 10-12 minutes or until lightly browned. Cool on
wire racks. Yield: about 6 dozen.

Hi Katherine, yes – I use a sharp knife to go around the cherry and twist. This releases one half and makes it easier to get the pit out of the other. I then line a cookie sheet with a piece of parchment paper and lay out the cherries evenly. The cookie sheet then goes into the freeze for a couple of hours to flash freeze (I don’t cover) The cherries can then be placed in a freezer Ziploc bag. The freezing on the cookie sheet allows the cherries to stay separate and not stick together in the storage bag.

We haven’t had cherries yet this season. I’ve seen them in the store though, and I’m raring to get in there and get some recipes going too.

Cherries have finally gone down in price in our markets here . . . from $10.00 a pound down to $4.00 a pound, so I’m so looking forward to baking with my favorite fruit CHERRIES!!!!! YUM! Happy 4th Katie!

We discovered a few months back that cherries and tart cherry juice help people who have difficulty sleeping. My husband drinks it every night now before bed. These look yummy, Katie! Happy 4th!
