Crockpot Pear Pudding

Pears are reasonably priced and available in most markets this time of year. This wonderful Crockpot Pear Pudding is a great way to make use of the fruit of the season. I am a Taste of Home blogger and I adapted this original recipe  to fit a sugar free and lactose free diet. If you are not on a restricted diet I have also included the “regular” ingredients and the original recipe below 🙂

 

What You Need
1 1/4 Cup all-purpose flour
1/2 Cup sugar Substitute ( I use Splenda)
1-1/2 tsp Baking powder
3/4 tsp. Cinnamon (dry ground)
1/4 tsp. Salt (optional)
1/8 tsp. Cloves (dry ground)
1/2 Cup Lactose free milk (or your milk preference)
4 Pears (use any of the pear varieties available (peeled, cored, cut into small bites sized pieces)
1/2 cup chopped pecans (optional)
1 1/4 Cup brown sugar substitute (or brown sugar)
½ Cup Lactose free margarine (or 1/4 cup butter, softened)
1/2 cup boiling water
Nonstick cooking spray
3 Qt. Crockpot
Sifter
Large bowl
Medium Bowl
Whisk

Before You Start– Spray inside of crockpot with nonstick cooking spray, bring water to a boil.

Lets Make It! In a large bowl sift together flour, sugar, baking powder, cinnamon, and cloves. Whisk in milk until smooth, add pears (and pecans). Pour into prepared crockpot and spread out evenly with the back of a spoon.
In a small bowl, combine brown sugar and margarine (or butter) stir in boiling water. Pour slowly all over the contents of the crockpot (don’t stir). Cover and cook on low for 3 ½ to 4 hours (or until pears are tender).
Serve warm with ice cream or whipped topping and sprinkle with your favorite nuts is desired.

Ingredients
1 cup all-purpose flour
1/2 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cloves
1/2 cup 2% milk
4 medium pears, peeled and cubed
1/2 cup chopped pecans
3/4 cup packed brown sugar
1/4 cup butter, softened
1/2 cup boiling water
Vanilla ice cream, optional
Directions
1. In a large bowl, combine flour, sugar, baking powder, cinnamon, salt and cloves. Stir in milk until smooth. Add pears and pecans. Spread evenly into a 3-qt. slow cooker coated with cooking spray.
2. In a small bowl, combine brown sugar and butter; stir in boiling water. Pour over batter (do not stir). Cover and cook on low for 3-4 hours or until pears are tender. Serve warm with ice cream if desired. Yield: 10 servings.
