Pulled Pork with Jalapeños

I am happy member of the Hormel extended family. As a Hormel Blogger, every month I am challenged to create a recipe using ingredients provided by Hormel. This month’s recipes is made using Llyods Hardwood Smoked Pulled Pork. This recipe was a big hit with my hubby and I have confidence it will feed your hungry family in a pinch too. In *Katies Tid Bits I have provided some yummy extras to try, or if Lloyds pulled pork isn’t available in your area you can always use your favorite pulled pork recipe too.

What You Need
1 Lb. Package of Lloyds Hardwood Smoked Pulled Pork (divided)
4 Tbsp. or more if you like it hot, Jalapeños (chopped)
Your favorite pizza dough or your favorite refrigerated dough from the market.

Black pepper ground
Baking sheet
Nonstick cooking spray

Before You Start- preheat oven to 400°, I line my baking sheet with non-stick aluminum foil because mine has seen better days. You do not need to line yours. Spray baking sheet with cooking spray.

Lets Make It!
In a large bowl combine 2 Cups of bisquick baking mix, 2 Tbsp. of canola oil and ¼ cup hot water, mix well and using your hands create a large dough ball (if you are using refrigerator pizza dough, no need to make a dough ball). Pat the dough ball with your hands bake and forth until you create a thin oblong shape. If you are using premade dough manipulate it with your fingers to create a rectangle. Place the dough in the center of your prepared baking sheet.

Spoon half of the package of pulled pork into the center of the dough; distribute the jalapeños evenly on top of the pork. Pull each side of the dough up and over to meet in the center. Pinch ends closed and pinch top closed. Sprinkle with salt and pepper if desired. Place on the top rack of the oven and bake for 20-30 minutes until golden. Slice and serve hot.

   Katies Tid Bits- 1. if you do not have bisquick baking mix available please see my simple pizza dough recipe below. Note it requires a dough rise time of 1.5 hours).
2. Double everything to make two and use all of the pulled pork!
3. Instead of jalapeños (or in addition to) add sautéed onions, chopped green onions, or chopped Bermuda onions. Serve with coleslaw if desired.

What You Need
1 1/4 –oz. packet (2 1/4 teaspoons) active dry yeast
4 Tbsp. canola oil (divided)
3 3/4 Cups all-purpose flour (plus about 2-3 tablespoons for dusting
Rolling Pin 1 tsp. salt (optional)
1 tsp. Sugar (optional)
2 Large mixing bowls one with a lid ( or use cling wrap)

Before You Start –prepare a clean surface for rolling your dough, sprinkle with flour. Oil the inside of a large bowl.

Lets Make It!
In a bowl whisk together the yeast and 1 1/2 cups warm water (not boiling) (and the sugar). Set aside until it starts to bubble (about 10 minutes). Add the oil and stir together. In a large bowl combine flour (and salt) and mix well to combine. Using your hands push the flour mixture around until you have a well in the center. Pour the bubbly yeast into the well, using your hands (or a wooden spoon) draw the flour in towards the center and move around the bowl. Continue until you have created a ball. Turn the dough out onto your prepared flour surface. Using your hands knead the dough repeatedly until it becomes smooth and stretchy (5 -10 minutes) dusting with more flour if necessary. Form into a dough ball again and place the ball of dough into your oiled mixing bowl. Cover tightly with plastic wrap and set aside at room temperature until it doubles in size,( about 1 hour, 30 minutes). Using flour coated rolling pin roll out and place onto baking sheet.
