Pumpkin Spice Pudding Day
Its Pumpkin Spice Pudding day!
Sorry, I’m posting late today. I don’t know if there really is such a day, but here at Katherines Corner it is Pumpkin Spice Pudding day. There are so many recipes for this little treat. I’m sharing mine with you today. Do you have a Pumpkin Spice Pudding Recipe I should try?
My Sugar Free Dairy Free version is easily adjusted for those not on a restricted diet. Check the *Katies Tid Bits at the bottom of the recipe. Please know your allergies and triggers before trying any of my recipes.
What You Need
1 can (15 oz.) pumpkin puree
4 Eggs divided (2 whole eggs and 2 egg whites)
1 tsp. Pumpkin spice
¼ tsp. Ginger (dry)
¼ Cup lactose free milk*
½ packet of unflavored gelatin (I use knox gelatin) *
¼ Cup Brown sugar substitute (I use Splenda)
1 ½ tsp. Pumpkin spice (I use McCormick)
¼ tsp. Nutmeg (dry)
Non-stick cooking spray
Pudding crocks or ramekins
Medium mixing bowl
Electric mixer
Baking sheet
Lactose free Whipped topping (optional for topping)
Before You Start- preheat oven to 325°, spray pudding crocks or ramekins with nonstick cooking spray.
Let’s Make It! In a bowl using an electric mixer beat eggs on high until foamy. Reduce speed to medium and slowly add all of the remaining ingredients a little bit at a time until all ingredients have been well incorporated. Pour into prepared ramekins. Place pudding filled ramekins onto a baking sheet and bake for about 45 minutes (until set). Remove from oven and let rest for 15 minutes. Place into a refrigerator to completely cool ( about 30 minutes). Serve cold with whipped topping if desired, sprinkle a little pumpkin spice too. Eat right out of the individual ramekins or spoon into pretty cups and layer with pumpkin and whipped topping and tada… parfait.
*Katies Tid Bits
Substitute lactose free milk with 1/2 a cup of heavy cream, no gelatin needed if using heavy cream
Use “real” brown sugar and increase to ½ cup
