Tomatoes and Peppers What To Do

Before I get started with today’s post.  I wanted to mention the change in the comments section. You all know how much I love your comments.Love them!! I try and reply to them all here at Katherines Corner ( sometimes I fall behind) . But the other day I had over 300 and I was so excited. Until I realized  only 7 were actual comments the rest were spam! So now there is  a little box that you have to mark when you leave a comment. I’m sure you understand.

Okay……As I mentioned in yesterday’s post we have tomatoes..lots and lots of tomatoes.

 

 

 

 

But we also have peppers, yes, lots and lots of peppers.  What to do? Easy Peazy..time to start cooking! I made spaghetti sauce base, marinara, or what I call “spaghetti starter”  It’s the wonderful rich and delicious beginning of my spaghetti or marinara sauce. Before I add more tomato sauce, mushrooms and meat, etc.I start with this.

I start by sautéing onions and  bell peppers in olive oil with a little basil,garlic and oregano. I toss in a bay leaf or two at the end just before adding the tomatoes.

 

 

 

I remove the skin from the tomatoes by cutting out the stems and placing them in boiling water. When they float to the top take them out carefully and remove the skin.

 

 

Then add the tomatoes to the sauteed veggies. Oops,no photo, sorry I forgot, just imagine  those tomatoes in the pot all mixed with the veggies, they look good right? Okay just cook for about 5 minutes.  Let cool, remove bay leaves and spoon into freezer safe containers.

I made a bunch to put in the freezer to use in the cooler months when the sweet taste of garden grown veggies is an absolute treat.

Pick A Purple Pepper

This beautiful deep purple bell pepper in our garden got me thinking about this old blog post about the rainbow of colors you can find in the vegetable aisle. Looks like I followed through with the purple bell pepper planting. Now it’s time to start picking some peppers.

There’s a rainbow of color in your vegetable aisle and at the local farmers markets! Have you noticed that bright white cauliflower now has a purple friend? Or that green peppers aren’t always green? I don’t mean yellow, or red, I mean purple!

Purple, my favorite color, is making its way onto our plates. Thanks to hybrid farming your dinner plate can look like a rainbow. Now, I don’t mind trying something different so purple cauliflower may be the next new thing on our dinner table.

Our vegetable garden has been thriving this season. We are currently overwhelmed with fresh tomatoes. No complaints, we love them even if they are just a beautiful red color. I wonder if someone will develop purple tomatoes! That would be perfectly fine with me. I’ll plant them alongside the red ones.

 

 

 

Our green peppers are green and that’s just fine too. But next year, I think we’ll try purple ones and maybe purple carrots too. Maybe our grandchildren will eat more vegetables if they resemble candy.

Lovely Lilies

We had some really cold weather here in May and into June too. It was really hard on our lovely garden. I was sure when the tulips never came up that the lilies were hiding deep in the earth too. Who can blame them. We had snow in June!

 

 

Today I spent a few minutes admiring our lovely lilies. I’m so happy a few of them made it!

Lots of yellow and only a couple of pink ones.I think about half of them bloomed.  I cut a few and put them in some fun containers.  I have plenty of teacups.

 

 

 

Yes that’s a gravy boat!

 

 

 

 

 

I love seeing them on our table as much as I love seeing them in our yard.

 

 

 

 

What would a post about lilies be without a little poetry? giggle, that’s not it, but it does rhyme. Instead here’s a little poem by William Blake.
