Ginger Nut Cookies
I have always loved the taste of ginger and I like creating recipes using ginger.These ginger nut cookies are delish and I know it is the ginger that makes them soooo good. Oh and nuts of course! Do you have a favorite ginger recipe?.
What You Need
1/2 Cup self-rising flour
1/2 Cup pistachio nuts ( shelled)
1/2 Cup crystallized ginger
2 Eggs (whites only)
3/4 Cup sugar
1 tsp Honey
1 tsp Orange zest ( do not get any of the white when you grate your orange skin)
Mixing bowls
Baking sheets
Nonstick cooking spray
Food Processor
Hand mixer
Wire cooling rack
Before You Start: Preheat oven to 300° and spray 2 baking sheets with nonstick cooking spray
Lets Make It! Place flour and nuts into the food processor and pulse about 10 times ( it will look like coarse mealy flour). Pour flour mixture into a bowl and set aside. Add ginger to the food processor and pulse 6-10 times (or until finely minced) add it to the bowl of flour and mix together. Place egg whites in a separate bowl, and beat on high with a hand mixer for about 1-2 minutes ( or more) until soft peaks form. Continue beating at high speed and gradually add the sugar and honey. Continue mixing for 4-5 minutes (or until thick and glossy). Using a spoon or spatula, gently fold into the flour mixture. Drop dough by level tablespoons about 2 inches apart onto prepared baking sheets. Bake for 18 minutes or until firm. Remove from baking sheets, and cool on a wire rack.
Makes about 2 dozen

Unfortunately, with my new eating regime, I can’t eat flour, because I would definitely have made these. They look really scrumptious. I love ginger very much in all forms as well, and with the pistacchio nuts, I bet they are divine!!

Thank you so much for taking the Exposure 99% weekday button. When i was growing up, my mom don’t miss cooking with ginger. I make ginger juice right inside my kitchen. I don’t miss using it when cooking. So i can tell how lecker this cookies will taste…

These sounds marvelous! I tried a chocolate-ginger cookie over the weekend which was delicious, too! I like that there’s bits of ginger in this cookie. It will definitely be on my to-try list! 🙂
