Yesterday came and went in a blink. I was secluded in my art room all day yesterday creating orders for my shops Keepsakes By Katherine and Be Well Gifts. Did you miss me? That sounded needed didn’t it, giggle
Those of you who join me on facebook already know that our sweet Izzy ate a Katydid yesterday! What…I hear you saying eww. He had a tummy ache for a while but is fine now.
I had a little time last night to visit some of your lovely blogs and hang out at pinterest and then it was time for bed. Blink the day was over.
I found some yummy desserts to add to my Just desserts board on pinterest . I thought I’d share a delish Almond Pound Cake recipe that I just love with a cup of tea, maybe you’ll find it worthy of your pinterest board 🙂
What You Need
2 1/2 Cups flour
2 1/2 tsp. Baking powder
1/4 tsp. Baking soda
1/2 tsp. Salt
3/4 Cup margarine or 1 1/2 sticks unsalted butter (softened)
2 Cups Sugar substitute (or 1 1/2 cups sugar)
3 Eggs
3/4 Cup milk
1 1/2 tsp. Almond extract
1/4 Cup Almonds (raw, sliced)
Nonstick cooking spray
Aluminum foil
Loaf pan 9x5x3
2 Mixing bowls
Rubber spatula
Electric mixer
Wire cooling rack
Before You Start -Preheat oven to 350° and prepare your loaf pan by spraying the inside well with cooking spray
Lets Make It! In medium-size bowl, combine flour, baking powder, baking soda and salt. Set aside. In a large bowl, beat margarine (butter) with an electric mixer on medium high speed until smooth. Add sugar substitute (or sugar) and beat for about 2 minutes more. Add eggs, one at a time, beating well after each addition. Reduce speed to low and add half of the flour mixture. Scrape down the sides of bowl (with a rubber spatula) and add milk, beat to combine. Add remaining flour mixture and almond extract and beat until smooth (about 3-5 minutes). Spread into prepared loaf pan. Bake for 40 minutes, remove from oven and add almonds, sprinkle them all over. Cover lightly with an aluminum foil tent and cook for 15 more minutes ( or until it has puffed up ,mine split in the middle) then remove aluminum foil and cook 5-10 more minutes until golden. Remove from oven and let rest in the loaf pan for about 10 minutes remove from pan and let cool on the wire rack.
Serves about 10 slices

My Garfield ate a moth last night and had no appetite today, poor guy. Glad Izzy is in the pink again!

So glad your baby is feeling better. And I know what you mean by blinking and it’s over. I spent the day shopping with my baby girl who leaves for her freshman year of college in just 2 days! Talk about blink and it’s over!

Poor Izzy! Today was a rainy and somewhat tired day here. We didn’t do much although my older one was out with her Grandma all day so I got nice time with the baby.

I stayed home all day yesterday. I did some genealogy research, restored a vintage photo for someone, finished one book and started another, and watered indoor plants. It was a great day.
Sounded like a great day yesterday and glad you got so much done. I took the girls for a hair cut, but not before I got some work done in the morning and then when we got home later in the evening, too!! And thanks for sharing that awesome cake recipe 🙂
Poor Izzy. My Son’s dog is just getting over being really sick from getting in a purse and eating a brownie. It took days.
