Mushroom Soup

Life throws us curve balls once in a while. Last week I failed to catch mine. I was forced to be unplugged as I was without internet service for days. Boy do I have a lot to catch up on.  I missed you all. ♥  Then I found out I was one of the millions that was a victim of the target store hack. Ugh…. life will always throw us curve balls. Some we catch and some we may miss. But either way we must move forward….and that is just what I do.  I am happy to be back online and sharing with you again this week. Did you know it is national soup month? We have had plenty of snow and cold weather here so I have been making soups often. I know some of you are living in states that surely resemble the North Pole.  So soup is a great way to warm up. Today I am sharing my mushroom soup. You can find more of my soup recipes in the vegetable recipe section.

What You Need

3 1/2 Cups mushrooms – button, portobello or a mix of both ( cleaned* sliced)

1/4 Cup celery ( chopped) ( about 3 stalks)

1/4 Cup green onions tops and bottoms (chopped) ( about 4 onions)

1/4 Cup white onion ( chopped)

1 Garlic clover ( crushed)

1 1/2 tsp. Dry rosemary

1 tsp. White pepper

3 Tbsp. butter ( unsalted)

1/4 Cup olive oil

Pinch sea salt ( or more to taste)

4 Cups chicken broth (or vegetable to make it vegetarian)

2 Cups water

1 Cup Milk  or cream (optional)

Soup pot

Lets Make It!

Heat olive oil in the soup pot over medium high heat, add onions, celery, garlic,rosemary and sauté for 5 minutes, add butter and sauté’ until white onions are translucent. Add mushrooms, salt and stir to combine, add broth, water and bring to a boil. Simmer over low heat for about 20-30 minutes until mushrooms are tender. This step is optional- The last five minutes of cooking time add milk or cream this is optional.

Serves 4 (or two very hungry adults)

    oh no really…I heard Neiman Marcus has problems as well… Make sure you get a good monitoring system in place in addition to what Target is providing. This soup looks delish and I SUPER love mushrooms #healthy

    Katherine, I love your personal thoughts on going forward when life does throw us curves. I have been there numerous times. It is great to share friendship tips like that to inspire others to do the same. As for your Soups..Yummy! I love just about all soups. LOL You can make so many different kinds. My favorite is Split Pea with Ham. I am going to try your Mushroom soup. Hugs Echo 🙂

    Oh, Yum.
    Hubby wouldn’t eat it only because it doesn’t have any meat in it. He is a meat eater but then it’s that much more for me to eat. :} His loss, my gain :}

    We are Target targets, too! Our credit card company is reissuing ALL the cards that were used there. What a pain for everyone! Glad you are back online!

    So sorry for both the internet loss and the Target Credit card hacking. I have a Target card I used there during this time and kept checking myself. Just glad you got it all worked out and thank you for sharing this delicious soup recipe with us today, Katie. Hugs 🙂
