Confetti Chicken and the Thursday Favorite Things Blog Hop-

If you saw my live broadcast on facebook ( thank you) you know I mentioned a very simple recipe I call confetti chicken. I only snapped a quick photo while it was in the pan. We were hungry! This is a terrific recipe for using leftover chicken or leftover rice.
Confetti chicken
This is the perfect recipe for leftover chicken, if using leftover chicken skip the chicken cooking process and sauté garlic in oil only.
What you need
1 Boneless skinless chicken breast
2 Cloves garlic crushed
3 Tbsp. Canola oil
2 ½ Cups white rice cooked (jasmine rice works well too)
1 Cup mushrooms ( sliced) optional
3/4 Cup frozen petite peas, (or regular peas) thawed
½ Cup frozen carrots small cubes, thawed
1 Cup frozen white corn, thawed
1 Cup mixed bell peppers (julienned), thawed
1 1 ½ tsp. Katherine’s Everything Seasoning
1 tsp. Crushed red pepper (optional)
1/4 Cup parsley (chopped parsley) if using dry about 1 large Tbsp.
1 tsp. Salt optional
1 tsp. Black pepper
Large frying pan with lid
Before You Start– Cut chicken into small cubes or bites sized pieces
Lets Make It!
In a frying pan over medium heat, add canola oil and crushed garlic. Sauté until soft, add chicken and raise heat to medium high. Cook chicken throughout. Add all vegetables and stir to combine well. Add Katherine’s Everything Seasoning. Stir to combine. Add rice slowly and combine well, add salt, pepper and crushed red pepper. Combine well by using a spoon or spatula and drag from the inside edge of the pan edge to the center and back again. Sprinkle with parsley, cover with a lid and reduce heat to low and continue cooking for about 5 minutes. Fluff with fork before serving
Serves 2-4

I love that you just barely snapped a shot of that chicken recipe, Katherine. That’s happened to me too many times to count (where we just started gobbling it up too quickly or I planned to take a photo the next day with leftovers and we loved it so much we had none or I did’t think the recipe would turn out to be so amazing so I didn’t plan ahead and take more photos!)
