New Toy For Katherine

It’s snowing! It’s 6 :20 am and it’s snowing!  I just had to write that out loud ( wink). Not to long ago I mentioned to hubby that I have been wanting a pressure cooker pot ever since I did a giveaway with  the lovely Roz from La Bella Vita Cucina. Traditionally for Mother’s Day, hubby and I go to the local nursery and we get flowers  for the porch and patio containers. Which we  did. But, this year I received an extra surprise when hubby walked in with  A Power Cooker Plus on Sunday morning. He was excited to see my reaction when he said, “I have a new toy for Katherine”. I was thrilled. He got it for a very reasonable price and a discount too because it was the floor model. Unfortunately there was no owners manual and I had a bit of trouble finding one. Hubby found one! I know a lot of you are familiar with the instant pot brand, my daughter certainly is. Remember she cooks for 7.  I jumped on Pinterest  and Youtube yesterday to see what has been shared  about the Power Cooker Plus and I found a few recipes and tips I’d like to try. I am  also wondering how to convert some of my slower cooker recipes for use with my new toy and I found the answer at Margin Making Mom it’s below.

I was very curious about how to convert slow cooker recipes for use in the Power Cooker. She has an Instant Pot, but, I will assume it will also apply to my Power Cooker

I made Chicken and Rice for dinner lat night. It was my first attempt at creating a recipe from scratch for the Power Cooker plus.

3 Step Simple Chicken and Rice

What you need
Power Cooker Plus ( or equivalent)
1 ½ Boneless skinless chicken breasts
1 Cup Carrots (chopped)
1 Cup Celery (chopped)
1 Cup mushrooms (sliced)
1 Clove garlic (minced)
1 Tbsp. Vegetable Oil
1 Cup white rice (un-cooked)
1 ¼ Cup Chicken broth
1 Tbsp. Crushed rosemary
1 Tbsp. parsley (finely chopped)
½ tsp Thyme (dry)
½ tsp. Black pepper (fresh ground)
½ tsp. salt (optional)

Before You Start: Plug in your Power Cooker Plus, add oil and garlic, and then chop the rest of your veggies.

Lets Make It!
Add veggies, chicken and sprinkle with herbs and spices, add rice, pour broth over the top and set for 14 minutes. The power Cooker will let you know when it’s ready.
That’s it!!! Dinner is served.

*Katie’s Tid Bits *because I pride myself on transparency with you, I adjusted the broth for your recipe. Mine was a bit soggy. However, it didn’t change the yummy flavor just the mouth feel. So I reduced it from 2 cups to 1 ¼ cups instead.
Also, I didn’t take the time to get the perfect set up shot, sorry just a quick snap because we were hungry. I’m not sure it would have plated very well anyway, because of the extra broth. One other thing, it smelled fantastic when it was cooking just like it would in a slow cooker or roasting in the oven.
