Corrigans Irish Coffee

Well Begosh and Begorrah it’s Saint Patty’s Day on Saturday! As you can see from today’s post title our last name is Irish ( yes hubby has a wee bit ‘o the Irish in him). Since it’s on a Saturday this year I thought it would be fun to share an Irish Coffee drink with you. I know most of us think of Guinness beer for Saint Patrick’s Day, they even make it green in some cities. But there is another drink to enjoy ( responsibly). You can also make this completely non alcoholic, please see Katies Tid Bits below.

Have you heard of ” water of life”? Would you believe that’s the English translation of a Gaelic whisky distilled in Ireland. That’s a lot of responsibility for an adult beverage my friends ( wink). According to the Whiskey Exchange ( world of fine spirits) the Irish were the first of the British Isles to distill whiskey. After a bit of a down period they are once again reigning supreme and have brought the whiskey back from near extinction. It’s resurgence of popularity has nudged several Emerald Isle distillers to proudly create this traditional beverage once again, whether it is single malt, single grain or blended whiskey. I think you will find it all works in Corrigan’s Irish Coffee.

What You Need
10 oz. Rich black coffee (freshly ground) divided in two
4 tsp. Dark brown sugar divided in two
2 Tbsp. Irish whiskey divided in two
2 Scoop vanilla bean ice cream (optional) divided in two
Chocolate (shavings or sprinkles, or both)
Whipped Cream, for topping (optional)
Vanilla biscotti wafer (optional)
8-10 oz. Tall glass, mug, etc. (large enough to hold the 5 ounces of coffee the ice cream and whipping cream without spilling over. You can also put this in a bowl if you prefer.

Before You Start-
Put a room temperature metal teaspoon into your mug, glass, etc. I prefer a tall glass for this type of treat. It’s nice to see all the goodies. Pour some very hot or boiling water onto the spoon slowly and let it fill the glass. Let it sit for about a minute, then carefully remove the spoon and carefully pour out the water. This prepares the glass to receive the hot coffee without cracking (be careful though, it works 99% of the time).

Let’s Make It!
Add coffee and sugars to glass and stir to dissolve. Pour in whiskey, stir, add ice cream. Top with whipping cream, chocolate shavings, chocolate sprinkles. Add a biscotti vanilla wafer and taa daa.
Serves two

Katies Tid Bits*To make this non-alcoholic use hot chocolate instead of coffee and omit the whiskey.

    This sounds so good. I have tried Irish coffee a couple of times but never with ice cream, you can’t go wrong with ice cream.
