Hello friends, do you enjoy creating recipes? Have you ever entered a recipe contest? Do you, or does someone you love have a restricted diet? Do you enjoy a good challenge? Then this post is for you!
I’m on a very restricted diet. I have a lot of “trigger foods“, sadly one of them is cheese. I had been enjoying a delicious cheese substitute. It was “melt-able” flavorful and I enjoyed it in a variety of recipes for several years. But a couple of years ago they stopped selling it here in Utah. So I contacted the manufacturer and offered to purchase a few cases, but they declined. I did try a couple more times to get them to help me find the cheese. But sadly, no luck. They actually said stop calling us and go to Washington or Oregon to get the cheese. EEK… I did call many stores in Washington and Oregon but not one of them would sell and send me the cheese. Of course I offered to pay all the shipping fees, etc.

So you might be asking what’s so special about this cheese Katherine? Well besides being delicious, melt-able and free of trigger ingredients it is made from rice! They actually spell the word cheese with a z “cheeze” you can see in the upper left photo. (smile)
I spent hours upon hours searching for my “some might not call it cheese, cheese. ” I’ve tried to recreate the recipe, but no luck yet. So what does someone do when they are bereft of cheese?
I thought of YOU!

Thanks to Laura and you for reaching out to me. I’ve made cheese sauces out of: 1) potatoes, 2)white beans, 3) oats and 4)cashews but I’ve never made sliceable cheese or rice based cheese. What a fun contest! Good luck!!
