Asparagus Recipes-

I splurged and bought some asparagus last week. You may have seen my Instagram post. Hubby and I both enjoy recipes made with asparagus. I have shared several with you. But, my favorites are steamed, or grilled with a poached egg. We have it for dinner too with a piece of toast and a side of grits. I’ve mentioned it often enough, I love having “breakfast” for dinner.  Just a quick reminder on how to prepare asparagus for cooking. Wash, pat dry, bend and break the ends, asparagus tells you where to break it, usually about 1-2 inches from the bottom. Use a potato peeler to remove the husk.

Asparagus is such a healthy vegetable. It is loaded with fiber, vitamins and antioxidants. It’s a shame it is so expensive. I read somewhere that it is a brain booster vegetable. I don’t know about you, but I need a boost pretty regularly. Frozen is often a much less expensive means to add this healthy veggie to your menu. We have a local farm where we can pick our own asparagus. It isn’t much fun but it is a lower cost.
It’s important to eat your asparagus they day you pick it/buy it or at the latest, the very next day. If you do have to wait to eat it, put the bundle bottom side down in a bowl of cold water and place it in your fridge ( preferably where it won’t get knocked over). Asparagus looks hardy but it actually goes bad quickly. If you see it in your local store and it is not on ice or in the cold section, pass!
