Meatless Monday Memorial Day Recipe

As we remember those who have made the ultimate sacrifice for our freedom. Please join me in prayer as we ask our Lord to hold our service men and women in His strong arms. To cover them with His sheltering grace and presence as they stand in the gap for our protection.

 

May all the members of our armed forces be filled with courage to face each day and may they trust in the Lord’s mighty power to accomplish each task. Let our military brothers and sisters and their loved ones feel our love and support. Amen

Today’s meatless Monday Recipes is as sweet as pie, apple pie and easy as pie too!

What You Need

Pastry for 2 crusts (I use the premade pie crusts from the market)

8 Cups (about 3 lbs) baking apples (peeled, cored and sliced Granny Smith, Jonathan, Honeycrisp or your favorite baking apple)

2 Tbsp lemon juice

3/4 Cup white sugar

1/4 Cup brown sugar

1/4 Cup flour

1 tsp Cinnamon

1/4 tsp Nutmeg

2 Tbsp Butter

1 Egg

1 Tbsp milk

Basting Brush

Large bowl

Small bowl

9 Inch pie pan

Before You Start: Preheat oven to 425° and prepare your apples, place bottom pie crust into pie pan

Lets Make It! In a bowl mix sliced apples with lemon juice coat well. In a small bowl combine sugars, flour, cinnamon and nutmeg, add to the apples and  mix well to coat. Pour coated apples into the prepared crust lined pie pan and add butter in little bits evenly all over the apples. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or with your thumbs. In the small bowl, beat the egg and milk with a fork and then using your basting brush, brush mixture over top crust. Bake at 425 ° for 15 minutes. Then 350 °and bake for 40-45 minutes more or until crust is golden and filling is bubbly.

Serves 6-8

Necessity is the Mother of Invention, Craft

I believe it was Plato who said “necessity is the Mother of invention” .This “craft” post is a perfect example of that. I use the word craft loosely as this is beyond simple. I use a glue gun , therefor it is crafty, giggle.

I have a health goal of 10,000 steps a day ( I usually only reach about 7500) I wear a pedometer every day. What I should say is, I lose a pedometer almost every day.  I have purchased numerous pedometers. I only buy the inexpensive ones now . They were always sliding off and I was loosing them all of the time. I checked the sporting good shops and couldn’t find a pedometer with a better grip on the clip. That brings me to today’s bit of craftiness.

What You need 

Pedometer

Old rubber glove

Scissors,

Hot glue gun

Pencil

Paper

Lets Make It!

Pedometer Grip

Cut two  squares from the rubber glove palm area.

Measure the grip of your pedometer and draw a shape matching the pedometer grip on a piece of paper and cut it out. Mine was oval.Place the cut shape onto your rubber glove and cut out the rubber glove to match.

Place a few dollops of hot glue onto your pedometer clip and place the rubber glove shape onto the glue on the grip. Do both the top and the bottom. Do not glue directly onto the rubber glove piece ( it will melt). Trim any excess and you are done. Now when you clip it on it won’t slip off.

I love reusing, re-purposing and recycling.things. So in addition to the pedometer grip I also made a jar opener too. Great for opening those stubborn jar lids.

Cut your glove up the sides and open it out and flatten. Cut out a circle about four inches in diameter. That’s it you are done! Just  put the rubber side onto the jar lid  and grasp tightly and taa daa! You can never have to many taa daa moments :-)

Tid Bit Tuesday My Happy Place

You’ve probably heard it many times ” go to your happy place”. I say it to our grandchildren when they are upset. It may sound simplistic, but that is the point really. It can be simple to set your mind to a happy thought or happy image. To go to your happy place mentally. It’s like changing channels on your radio from white noise to a beautiful melody. It takes time and patience to master the art of changing the channel quickly. But once you have mastered it, it will not fail you, and it will be simple.

I am blessed to have several happy places stored in my memory bankI have a few I use often. One of my happiest places is wrapped tightly in the arms of my beloved husband. When I go to that happy place I can feel his heart beating against my chest and the warmth of his arms as they wrap me like a cozy blanket. Or I find my happy place by visualizing the smiles of our grandchildren. Or the first time I cradled my daughter in my arms and she looked up at me precious and trusting. Our eyes met and locked on each other as if our hearts were speaking words.I also use a ” happy place” from my childhood when meditating. Unfortunately I do not have a lot of happy childhood memories. But, the few I do have I hold onto. I have been meditating ever since I was a young girl. My mother taught me to meditate to help me to relax at night. I often had difficulty sleeping. I created a very simple to follow meditation video a couple of years ago that is still visible on youtube. We lived in France, I was nearly age 5 and my brother 8 months when our Mother took us on a picnic> It was my brothers first picnic. She found the perfect spot, a field sprinkled with daisies. We sat on a blanket for what seemed like hours making daisy chain necklaces and princess crowns. When I use this “happy place” image I can feel the sun warming my skin and feel the crown of flowers resting on top of my head.
