  1. Hi, Katherine; thank you so much for including my tacos (Mexican, Tex-Mex, and Swedish styles) amongst your features! I just wanted to mention that the “lime” in corn tortillas is not from the citrus fruit, but rather calcium hydroxide, a mineral commonly named “lime rock” or “lime salt.” It is used to soften the outer coat of corn, and also gives a special flavour to nixtamal dough (masa).     1. Oh my goodness Irene, are you serious? I’ve asked so many people about it over the years and nobody ever mentioned it wasn’t from limes ( citrus fruit) thank you soooo much! Okay I must by corn tortillas and tortilla chips right now! xo

      1. Yes, have fun! Make sure to buy fresh or frozen corn tortillas, not the “shelf stable” and tortilla chips as natural as possible, since some highly processed brands do add citric acid as a preservative. As with any new foods, try a little first, just to be completely sure they are safe for you. Please keep me posted, hugs!
