Fresh Cucumber Relish
The long holiday weekend went by quickly, as they always seem to do. Thank you to all who linked up at the hop. I was happy to see so many of you made it. I hope you all had a lovely long weekend in the (US) and a lovely weekend overall for everyone. I enjoyed spending time with my hubby and being back in the kitchen again and having a routine. I am found of routines.
We picked a lot of fresh veggies from our garden this weekend and they are perfect for today’s fresh and light recipe for cucumber relish. This is perfect over fish, like this striped bass my hubby caught. Over chicken breast, or you can even put it on a lettuce wedge for a terrific salad. I adapted this recipe from my brother in laws cucumber salsa recipe which I also included below.
2 Cups cucumber ( seeded peeled finely chopped)
1 Cup tomato (seeded and finely chopped )
1/4 Cup Bermuda onion (finely chopped)
1/4 Cup fresh Italian parsley (minced)
1/4 Cup fresh basil (minced)
1/2 tsp. Garlic (minced or pressed)
1/4 Cup sour cream ( I use IMO lactose free nd low fat)
1-1/2 tsp. Lemon juice
1-1/2 tsp. Lime juice
1/2 tsp. Mrs. Dash seasoning
1/4 tsp. Black pepper
1/2 tsp. Salt
Two bowls
Lets Make It
In a bowl, combine cucumber, tomato, onion, garlic, basil and parsley. In the other bowl, combine the sour cream, lemon juice, lime juice, salt and pepper and Mrs. Dash seasoning. Spoon sour cream mixture over the cucumber mixture and toss gently to coat. Serve immediately
Serves 2-4
Keith’s Crisp Cucumber Salsa:
2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips
In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.
Which of these recipes will you make first?
for me I would add dome watermelon too…yea I know am weird :p

I don’t think I’ve ever had anything quite like either one of these. I usually just eat my cucumber plain, or in a salad.

YUM says this vegetarian : ) LOL!!!! The first salad is almost identical to my Mom’s! Love it and the second one is on my list to make…you had me at jalapeno!!!! : ) Either would be fabulous on Falafel…try it…you will LOVE LOVE LOVE it!!!
