Chicken Chili Tortilla Bowls
If you are in a pinch for time and you are looking for something filling and yummy I have just the recipe for you today. Actually it’s not so much a recipe as it is a DIY and semi home made bit of yumminess.
What You Need
1 Can 15 oz. Hormel Cook Off Series, White Chicken Chili (divided in half)
1 Package Herdez Soft Tortillas (taco size)
1 Tbsp. Herdez Red Guajillo Chile Mexican Cooking Sauces
3/4 Cup Cheddar cheese (shredded and divided in half)
¼ Cup black olives (sliced or chopped)
2 tsp. Canola Oil (divided)
2 Single serve crock/baking dishes or ramekins (2.5 cup each)
Baking sheet
Chi-Chics Medium Cilantro Salsa (optional)
Tortilla chips (optional)
Sour Cream (optional)
Before You Start
Preheat Oven to 350°, coat inside of each baking dish with canola oil
Lets Make It!
Layer three tortillas to fill the bottom and sides of each prepared crock. Add half can of chili to each. Place on baking sheet and bake for 15 minutes (until tortillas start to brown and chili is heated through. Remove from oven, top with equal parts cheese and drizzle ½ Tbsp. cooking sauce over the top of the cheese, return to oven to melt (about 2 minutes). Garnish with black olives. Serve with chips and salsa and topped with sour cream.
Serves two
*Katies Tid Bits, try adding chopped jalapenos instead of olives, or maybe even both!
