Maple Bacon Scalloped Potatoes for Two
I am happy to share a little twist on scalloped potatoes today. Hubby had a big bowl of Yukon Gold potatoes from the garden. He said scalloped potatoes, question …with an eye brow raise, giggle. Never one to disappoint I said maybe some Maple Bacon Scalloped Potatoes for two? Yes!
What You Need
2 Large potatoes or 4 medium (peeled and thinly sliced)
16 Pieces of Hormel Maple Bacon
2 tsp. Garlic (powder) divided
4 Tbsp. butter (soft or room temperature)
1/2 Cup. all-purpose flour
1 tsp. Salt
2 tsp. Ground black pepper
1 Cup half and half, cream or milk
2 Bowls
Sifter
Baking sheet
20 oz.Mini crock/ personal size crock or similar dish for baking. ( I use corning ware crocks)
Before You Start- Preheat oven to 350°, pour milk into bowl and add potato slices (this will keep the potatoes from changing color). This recipe makes two personal crocks of bacon wrapped scallop potatoes; you will need to divide everything equally into two baking crocks. It will make a bit of a mess on your crocks,that is why the baking sheet is necessary. I know I could have wiped all the edges of the crock to make it look pretty. I left it though ( just keeping real, Lol)
Lets Make It! In a bowl sift together all dry ingredients. In the crock, lay bacon 4 across and then 4 across again, the opposite way ( if you want to get fancy you can weave the bacon. This will leave a bit less bacon for covering the top.) Add one layer of potatoes, using a spoon sprinkle with dry ingredients; add a dollop of butter on top, repeat until 1 potato (or 2 medium potatoes) has filled the crock. Pour milk over top (milk from potato bowl) fold bacon over the top. Place on baking sheet and cook for 30-45 minutes until bacon is crisp and potatoes are tender.
Serves 2
