Cinco De Mayo Recipes
Cinco de Mayo is getting close and it’s always fun to create new recipes for the occasion. I’ve gathered together some extra yummy recipes to try that put a plain ‘ole taco to shame ( wink) I love tacos so don’t get me wrong. I’m still trying to find a way to make corn flour without using citrus ( anyone?) Cinco de Mayo a great reason to celebrate and to experiment with new Cinco de Mayo recipes. Did you know that Cinco de Mayo is more prominently celebrated in the USA than in Mexico? Thats right , we know how to party ( wink).
Okay, are you ready to step away from the box of taco shells and give these new Cinco de Mayo recipes a try? Let’s start with my favorite meal of the day, breakfast! Please note these are not recipes for a restricted diet, ( but you may be able to find substitutions for some of the ingredients.) These have all the good stuff I can no longer enjoy but I sure hope that you can.
Mexican Breakfast Chilaquiles to be exact, that’s right we are having nachos for breakfast!
What You Need
6 large eggs
1/2 tbsp. canola oil
5 oz. tortilla chips
1 c. Shredded Monterey Jack cheese
1/4 c. pickled jalapeño slices
1 avocado, thinly sliced
1 c. pico de gallo
2 tbsp. cilantro, chopped

Plan a delicious lunch with this full of flavor recipe for Zucchini and Cheese Quesadillas
What You Need
2 c. thinly sliced zucchini and/or yellow summer squash (about 10 ounces)
4 (8-inch) whole wheat flour tortillas
3/4 c. crumbled Cotija cheese (or shredded cheddar or Monterey Jack)
2/3 c. Thinly sliced scallions
1 serrano or jalapeño chile, thinly sliced
1 tbsp. plus 1 teaspoon olive oil
1 avocado, diced
3/4 c. store-bought fresh tomato salsa (or tomatillo salsa)

What You Need
1/3 c. tomato sauce
1/2 tsp. white wine vinegar
Pinch of superfine sugar
4 plum tomatoes, seeded and diced
1/2 small yellow onion, diced
1 garlic clove, minced
2 tbsp. minced fresh cilantro leaves, plus more for garnish
Juice of 1 lime, plus 4 wedges for serving
Kosher salt
Freshly ground black pepper
Canola oil, for frying
4 (4-to 5-ich) corn tortillas
4 tbsp. unsalted butter
4 large eggs
2 c. cooked black beans, warmed
1/4 c. crumbled Cotija cheese

1 tbsp. extra-virgin olive oil
1/2 onion, chopped
2 cloves garlic, minced
1/2 lb. ground beef
1 tbsp. tomato paste
1/2 tsp. oregano
1/2 tsp. cumin
1/2 tsp. paprika
kosher salt
Freshly ground black pepper
1/2 c. chopped tomatoes, drained
1/2 c. chopped pickled jalapeños
flour, for rolling
2 packages refrigerated pie crust dough
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Egg wash
Freshly chopped cilantro, for garnish
