Quick Easy Ham and Pea Soup
Quick Easy Ham and Pea Soup-
2 Tbsp. Dairy free margarine *
1 Tbsp. canola oil
1/4 Cup leek white part only (chopped)*
2 Cloves garlic (crushed)
1/2 tsp. Thyme (dry)
6 Cups peas (fresh or frozen and thawed)
2 Cups Hormel Cure 81 classic dinner ham (chopped)
1 Cup water
4 Cups vegetable broth
1 Cup Lactose free milk
1/2 tsp. Salt (optional)
1 tsp. White pepper
Large soup pot
Food Processor or blenderLets Make It!
Heat oil and margarine in soup pot, over medium heat until margarine has dissolved. Add leek and garlic and saute’ while stirring occasional until softened (about 4 to 6 minutes). Add thyme and pepper and stir until well combined (about 1-2 minutes). Adjust heat to high and add water and broth, bring to a boil. Add peas and cook until it reaches a rolling boil, stir and reduce heat to medium and simmer uncovered for 10 minutes until peas are tender, stir until heated through. Carefully add soup to a food processor and blend (in batches) until it reaches your desired consistency (we like it little lumpy).Return to soup pot and add milk, ham and salt to taste. bring to a simmer ( to heat the ham through) then serve.
Serves 4
Katies Tid Bits, if you are not on a restricted diet use Equal parts white onion instead of leeks. Half in half instead of lactose free milk. Butter instead of lactose free margarine
