Country Biscuits

DebbieThe lovely Debbie from Deliciously Inspired is my featured guest blogger today! She is sharing a wonderful recipe for country biscuits and a little surprise for you too. Debbie is the Founder/Creator of Deliciously Inspired.  Her blog was created to house the many ideas that enhance her life and it is her hope that one or two of them will inspire others. You can find recipes, organization, craft, home decoration and her love of writing and learning photography all shared at her blog.  She has been cooking for over 40 years and has learned to modify most of her recipes due to food sensitivities in her own family and her goal to live a healthy lifestyle.

Ingredients 

2 -1/4 cups White Spelt Flour or flour of your choice

3 tsp Baking Powder

1 tsp Salt

1 Tbsp Sugar

1 Egg Slightly Beaten

1/2 cup Butter, cold – cut into cubes-

2/3 cup Milk of your choice – I use unsweetened almond milk

   Directions

Combine flour, sugar, baking powder and salt in a medium bowl; stir well.  Cut in butter with pastry cutter or mixer until mixture resembles course meal.

Combine egg and milk; add to flour mixture, stirring just until dry ingredients are moistened.  Turn dough out onto a floured surface, and   knead 3 or 4 times.

Roll dough to 1/2-inch thickness; cut with a 3-inch biscuit cutter.   Score decorative marks with knife or fork tines, if desired.  Place biscuits  on an ungreased baking sheet.  Bake at 450 degrees for 10 to 12 minutes or until biscuits are golden.

Remove baking sheet from oven; brush hot biscuits with melted butter.

The soup in one of the pictures with the biscuits is my Sweet Potato Soup.  It’s creamy and spicy and can be made with chicken/turkey or as a vegetarian dish.  Most important it is fast because you start with prepared soup.  This soup was inspired after I ate at a local restaurant and really enjoyed the taste of a pumpkin soup they served. I had an upcoming product review for Calphalon and I knew I wanted to created something with those flavors which brings me to the time sensitive part.  Calphalon is going to provide one person a dutch oven just like the one I cooked this soup in.celaphon dutch oven But you need to enter by December 8, 2013.  This is approximately a $100 value and it would be a wonderful tool in any cook’s kitchen.  You can find the soup and giveaway information at the bottom of this post.
