Cheesy Chicken Loaf-
A new week is here already, wow the weekend flew by. I hope everyone had a nice weekend. The new week brings wonderful possibilities and opportunities to try something new. Today’s recipe is an easy and delicious start to the week and a nice alternative to ground beef meatloaf. Let make Cheesy Chicken Loaf
What You Need
1 1/2 Lbs Ground chicken
1 Egg
1/4 Cup green onions (chopped tops and bottoms)
3/4 Cup frozen peas and carrots (mixed bag)
1 Clove garlic (minced)
1 tsp White pepper
1 Tbsp. Parsley (dried)
1 tsp. Rosemary (fried)
1/2 tsp Salt (optional)
3/4 Cup Italian bread crumbs
1 Cup cheese (your choice cheddar or mozzarella ) grated ,divided
Nonstick cooking spray
Loaf pan
1 Large mixing bowl
1 small bowl
Whisk
Microwave dish with lid
Meat thermometer
Before You Start- Preheat the oven to 375°, spray inside bottom and sides of loaf pan with nonstick cooking spray. Beat the egg in small bowl with whisk.
In a microwave dish combine onion, carrots and pea mix, garlic and 4 tbsp. of water, cover with lid and microwave for 4 minutes on high (until veggies are tender, not cooked through). Set aside and let cool.
Crumble chicken into mixing bowl and add whisked egg, 1/2 cup of cheese, cooled vegetable mixture, parsley,rosemary, salt and pepper. Combine well with large spoon or your hands, sprinkle in bread crumbs and combine well. Place all into the prepared loaf pan smoothing the top with your hands or back of a spoon.
Bake until cooked through (about an hour) or when the meat thermometer inserted into the center reads 165°. Remove the pan from the oven and sprinkle remaining cheese on the top. Place back in the oven for 1-2 minutes until cheese has melted. Remove from oven and let sit for about 10 minutes prior to cutting and serving.

Do you use ground chicken in your recipes?
That is different. It looks really good and moist too. I would try it.
I can’t say I’ve ever tried ground chicken but this sounds wonderful. We all love chicken, I just finished a baked chicken for dinner tonight. This sounds like something my kids would like. Our 2 year old would eat chicken every day if we let him.

I don’t like meatloaf, but I’d eat one made of chicken. We do use ground chicken, mostly to make chicken burgers. (I don’t do beef burgers either.)

I am so not a meatloaf fan and one of my least favorite meals to be honest, but I like that you used chicken here and think mostly I am not a fan, because of the ground beef being used. So, I pinned to see about trying this one. So, thanks so much Katie 🙂
