Crock Pot Pepper Pork Roast

Crock Pot Pepper Pork Roast-

A new week ahead and it is SPRING!!! Happy spring everyone. ♥ Hubby prepped our veggie garden this weekend and the peas have been planted. Those of you who have been bloggy friends for a while know how happy he is to be back in the garden again. It is one of his “happy places”. I went outside too, but not for long as I was happily creating a blog makeover this weekend. I love the satisfaction I feel when I receive happy emails about my work. Today I’m sharing a very yummy crock pot recipe. I hadn’t originally planned to share it . But hubby insisted it was “blog worthy”. I just took a quick photo.This recipe is so simple and perfect for a busy weekend meal.

crock pot pepper pork roast recipe

What You Need

2 Lb Boneless pork roast

1/4 Cup black pepper corns ( crushed or milled)

1 Garlic clove

2 Cups baby carrots ( peels and cleaned)

4 Celery stalks ( sliced)

1 Medium white onion sliced ( about 3/4 cup)

6-8 Med red potatoes cut into bite size pieces ( peel optional)

1/4 Cup vegetable broth

Crock pot ( slow cooker)

Meat thermometer

Lets Make It!

Place pork roast fat side up into the crock pot. Add carrots, potatoes,onions,celery and garlic. Pour vegetable broth over roast and vegetables. Sprinkle pepper over the roast ( a little on veggies too). Cover and cook for  6 -8 hours on medium or high until the pork registers 145 degrees on the meat thermometer.

Serves 4-6

    We don’t eat pork but this looks good. Tomorrow’s dinner will be Slow Cooked Beef Brisket with cabbage and potatoes, don’t you just love your Crock Pot?

      Oh my friend I really do. I think you could make a crushed pepper brisket ion the crock pot by simply altering this recipe. xo
