Arugula Salad with Strawberries, Grapes and Goat Cheese-
Summer time is salad time, well at least it is at our house. Warm weather ( hottttt weather here in Utah) makes it so difficult to spend a lot of time in a hot kitchen. We have been fortunate to have plenty of fresh lettuce from our veggie garden lately and we have been eating a lot of salads. I am always on the look out for wonderful fresh salad recipes. Sherry, my cute as a button bloggy friend, from The Life Of The Party is my very special guest today and she has the same thoughts as I do about hot kitchens in the summer time.

The Life of the Party started as a place where I could share parties and events that I created for my friends and family. Although, I still love to entertain, I quickly realized you can’t have a party everyday…or I suppose you could but my budget wouldn’t allow for that 😉 I really enjoyed the creative process of bringing parties and events to life, I’m inspired by interesting color combinations, patterns and textures…not to mention themes and lets not forget the food.
Since I started the blog back in 2009 it has since morphed primarily into an interior design and fashion blog with a much smaller dose of entertaining. I share simple recipes that don’t take a lot of time for busy moms like myself.
Today I’m going to share one of my oh so simple summer salads. I live in a tropical environment with no A/C and honestly I complain about it probably too much. During the summer months I avoid the oven at all costs. This is one of my go-to salads that I can actually get the kids to eat as well. I like to mix greens with fruits and that seems to be the winning combination with my son who is not a fan of anything green.
Arugula Salad with Strawberries, Grapes and Goat Cheese
-One bag of Arugula greens
-About a cup of green grapes
-Cup of strawberries cut
-Red Onion (more or less) I go easy on the onions.
-Candied walnuts
– Raisins or Cranraisins
-Raspberry Vinaigrette

That’s how we are too. If it’s too hot to cook, we turn to the salads! I like that this has candied walnuts, that’s a nice treat, and I’ve never tried them before (I don’t think?). Pinning this to try at some point this summer for our fam.! TY. 🙂
We eat a tossed green salad throughout the year ( nearly with every meal) But in the summertime salad is often the main course. xo

My daughter came home from college and told me I needed to check out this great stuff called arugula… as if I’d never heard of it before. This is a girl who refused to eat salad the entire time she lived in my house. Too funny! The progress peers can make that a mother never can… This looks yummy. I’m pinning it. In the summer I love a quinoa, tomato and black bean salad to take along for cookouts.
This made me giggle. Our grandchildren do things like that to me all fo the time. ” Grandma did you know ” fill in the blank” giggle. xo
I love to use goat cheese believe it or not on top of homemade pizza here and also special grilled cheese. So, definitely want to try your salad now and thank you for sharing with us 🙂
