Almost Everything Marinade-
There’s still plenty of summer left to keep your barbecue going and my almost everything marinade recipe ( wink) is great for the grill. Marinating meats is all about using an acid based ” sauce” also known as a citrus, vinegar “soak” . Most meats fish and poultry prepared using marinades will be perfectly flavored after only a couple of hours of “soak” time. Marinating overnight is really not recommended when using acid based marinade; it can dry out the meat or poultry. I call this my almost everything marinade, because it does little for pork or beef.
A good marinade starts with fresh ingredients. It is my experience that marinades are a great way to enrich flavor and to tenderize tough cuts of meat too. But, use tis marinade on chicken, fish, or vegetables. Especially flavorful for grilling or broiling. Use it on white fish of any variety, we like striped bass because that is what my husband catches and brings home for dinner. Any cut of chicken.My simple marinade is easy to make and filled with fresh ingredients. If you want to substitute dry ingredients please see Katie’s Tid Bits below.
What You Need
1/2 Cup distilled white vinegar
1/2 Cup canola oil (vegetable oil if you prefer , but leave the extra virgin olive oil out for this recipe)
2 Tbsp. minced garlic
1/4 tsp. Celery salt
½ tsp. Oregano
1 Tbsp. granulated sugar (or agave syrup)
2 Tbsp. dried oregano
2 tsp. freshly ground black pepper
1 Sprig fresh thyme leaves stem removed (finely minced)
5 Fresh basil leaves finely chopped
2 Tbsp. Fresh Italian parsley finely chopped
2 Tbsp. pimento finely chopped (jarred)
1 Tbsp. Sea salt (optional)
3 Tbsp. Water
Lets make it!
Combine all ingredients in a bowl and whisk until you have a swirling and fragrant marinade perfect for boneless skinless chicken breast or any white fish. If you want to use this on veggies just baste it on about 30 minutes prior to grilling. Soak or baste and then hit the grill. You ‘ll love the results.
Makes about a cup.

I love trying new marinades and this one is getting pinned! Interesting that you mention not to use olive oil, that’s my go-to for marinades but I can see that canola would be perfect for this one.
