recipes to wake up your taste-buds! This is the first Monday Inspiration post of 2017. I love shining the light on bloggers who share at Katherines Corner. I’ll let you in on a little secret…come a little closer….I never used to like spicy things. I know, you are surprised aren’t you? I make spicy recipes all of the time. Almost 18 years ago the spiciest thing I ever ate was nacho cheese in a jar! Hold onto your hats friends, I used to dip my popcorn in the nacho cheese! I know it is weird, but I am okay with it. Have you tried it? Hubby took me to a “authentic” Mexican restaurant and I fell in love with it all. The chips and salsa, the wonderful chicken tacos, oh and that rice! I don’t know what is in that wonderful spicy yellow rice, but I loved it! I was hooked, my very favorite Chinese food took a step back and Mexican food took its place. Now with so many dietary restrictions we don’t eat out anymore. So I do my best to create recipes that have some similarities to those we used to eat. I can’t find any yellow corn meal that doesn’t have lime or citrus in it. I would really like to make some corn tortillas. Do you know where or if, there is such a thing? This weeks theme is, “some like it hot”. Let bring some wonderful spicy dishes to your table.

I use masa flour to make corn tortillas but to be honest I do not know if it contains citrus or lime. Have you checked into it? Our family loves spicy food! It’s the best!

Not really into spice foods in all honesty, but the ones you shared look delicious. My husband likes spicy foods, so will have to keep in mind for him. Happy Monday now, Katie xoxo <3
