Puffadoodle Cookies

Some of my favorite recipes are created from “mistakes made in the kitchen” grab a glass of lactose free milk, these are yummy! You are all familiar with snickerdoodle cookies, right? Well meet their cousin, Puff-a-doodle. Puffadoodle Cookies are Round puffy bites of cinnamon and sugar yumminess. This is a low sugar and dairy free recipe. If you are not on a restricted diet, please see Katie’s Tid Bits for substitutions. Care for a touch of irony? The magazine I grabbed from my “waiting to read” pile is the Diabetic Living magazine.

This is a low sugar and lactose free recipe. Please review the ingredients before baking to assure the ingredients meet your dietary restrictions.

What You Need
1 1/4 Cup lactose free margarine (softened)*
3 1/2 Cups sugar substitute (I use Splenda*) divided
2 Eggs
3 Cups flour
2 tsp. Cream of tartar
1 1/2 tsp. Baking soda
¾ Cup cinnamon
Large mixing bowl
Medium mixing bowl
Electric mixer
Baking sheets
Parchment paper
Pie baking dish (or shallow bowl about ¾ inch or more deep)

Before You Start
Preheat oven to 350°, line baking sheets with parchment paper, add ¾ cup sugar substitute and ¾ cup cinnamon to pie pan, mix well with a fork  and set aside.

Let’s Make It!
In a medium mixing bowl add flour, cream of tartar and baking soda, combine well with a fork. Set aside.
In a large mixing bowl combine softened lactose free butter and remaining sugar substitute, using an electric mixer on medium high, beat until creamy. Add egg and beat well on high. Add dry ingredients a little at a time, mixing on medium high speed until well blended. The dough will be sticky. Drop by large teaspoon full into prepared cinnamon and sugar substitute, rolling into a ball while in the cinnamon mixture ( it should be about 1- 1 ½ inches round) place onto prepared baking sheet about 2 inches apart. Bake for 10-15 minutes, you will see them begin to puff up while cooking,resist the urge to poke, pop or flatten. When golden, remove from oven and let cool. Store any uneaten cookies in the refrigerator for up to 2 days. They are best eaten on the day they’re baked.
Makes about 2 dozen cookies

*Katie’s Tid Bits if you are not on a restricted diet, please use 3 cups of sugar and use unsalted butter instead of the lactose free margarine.

    These actually look amazing!! I’m always on the lookout for baked treats that are low in sugar..as a type 2 diabetic, I know there are ways to indulge without being deprived <3.

        I will definitely keep that in mind!! I can’t use sugar either and sometimes it is a challenge! I do use artificial sweeteners though, and occasionally Stevia :). Have a great weekend!!
