The Mighty Mushroom

Hello friends, today on the blog, I’m sharing all things mushrooms. Well, okay not all things. But a whole lot of mushroom stuff (smile). I add mushrooms to a lot of my recipes. I also enjoy them fresh in salads too. I’ve been telling people for years, ” you never know, one day we might find out that mushrooms cure some horrible disease.” Aaah… yes, the mighty mushroom. According to the U.S. Department of Agriculture, the average American eats approximately three pounds of mushrooms a year. I can assure you I am far from average, and I eat a lot of mushrooms too. LOL

It’s true that mushrooms add a wonderful savory flavor to recipes. And, mushrooms have health benefits too. Researchers continually find how mushrooms can ward off chronic disease and improve your everyday health.

*Research shows mushrooms decrease the risk of cancer, what! Cancer studies (from 1966-2020) discovered eating just two mushrooms (about a 1/8-cup or two medium mushrooms) a day can slow cellular damage. Mushrooms have a high concentration of ergothioneine, which is an amino acid and antioxidant that prevents or slows cellular damage.

Mushrooms are a great meat substitute, which is good for your cholesterol or hypertension. Because mushrooms are naturally low in sodium, and they contain compounds that prevent the production of cholesterol.

Mushrooms can protect your brain!

One of my biggest fears as I get older is Alzheimer’s disease and/or dementia. Truly the cruelest diseases in my opinion. Researchers continue to study the benefits of mushrooms to help prevent MCI (mild cognitive impairment). MCI causes memory and language difficulties and is often a precursor to Alzheimer’s disease. My Mum has MCI, Dementia and early stage Alzheimer’s.

•  *Mushrooms contain Selenium, which helps your body make antioxidant enzymes to prevent cell damage. Choose cremini or portabella mushrooms for the most benefit.
•  Vitamin D, which assists with cell growth, boosts immune function and reduces inflammation. Maitake mushrooms offer an easy way to add vitamin D to your diet.
•  Vitamin B6, which helps your body form red blood cells, proteins and DNA. Shiitake mushrooms are the best choice for vitamin B6.

There you have it, the Mighty Mushrooms has a number of health benefits and continued research shows more are being discovered regularly.
