Easy Spinach Quiche Recipe
Hello friends, I hope your week is off to a wonderful start! I recently came across an old recipe for a spinach soufflé (aka Quiche Lorraine). I’m going to show my age here, but do you remember the phrase, “Real men don’t eat quiche”? It was an old joke about how “rugged” men only ate hearty steak and potatoes, while a soft egg and spinach quiche was somehow deemed feminine. They were actually assigning a gender to food, how silly is that? (smile)
That famous line comes from the 1982 book Real Men Don’t Eat Quiche by Bruce Feirstein, which was a humorous look at stereotypical definitions of masculinity in the early ’80s.
Now, I know it is way too hot to be turning on the oven for this recipe in the middle of August, but I hope you’ll save it to enjoy on a chilly autumn day!
What You Need
6 Eggs (beaten)
2 Tbsp. butter (softened)
16 Oz. sharp cheddar cheese (grated)
8 Oz. fresh parmesan cheese (grated)
1 clove garlic (crushed)
16 oz. small curd cottage cheese (creamy style if available)
2 10-ounce packages frozen, chopped spinach, (thawed, drained and wrung dry) NOTE This is an important step. If it’s too wet it won’t set well.
2 Tbsp. flour
½ tsp. Salt
1 tsp. pepper (more salt and pepper can be added when served)
¼ tsp. Crushed red pepper flakes (optional)
Whisk
Medium Bowl
Cheese Grater
Non-stick cooking spray or canola oil
12-inch round casserole dish (or 9-13)

Before You Start
Preheat oven 350 degrees F ° Spray inside bottom and sides with nonstick cooking spray or canola oil.
Leta Make it!
Whisk eggs in bowl, add butter, garlic, cheeses, flour, salt and pepper, red pepper flakes. Whisk well to combine. Fold in the spinach.
Pour into casserole dish. Bake for about 30-45 minutes (or until well set)
Serves 4 (or 2 hungry eaters)
