I’ve given it a lot of thought and I have decided to morph Meatless Monday into Meals on Monday. You can always count on me to share veggie recipes and delish dessert recipes . But now I will share a variety of poultry, pork , seafood and occasionally beef recipes on Monday too. I hope you will enjoy this change. The very first Meals on Monday recipe is Ham and Sage Noodles.

What You Need
½ Lb Smoked ham (thinly sliced and cut into strips)
1 Lb Broad egg noodles
1 Tbsp. olive oil
1 Medium white onion ( thinly sliced)
Salt and black pepper
8 Cups cabbage (cleaned, cored and thinly sliced)
1 Cup chicken broth
2 Tbsp butter
2 Tbsp sage ( chopped)
Large pot
Non stick skillet
Before You Start: Cook the pasta noodles according to the package directions.
Lets Make It! Heat olive oil in skillet on medium high, add the onion, ¼ tsp salt and ½ tsp pepper and sauté onion until well softened ( about 5 minutes). Add the cabbage, stir well, and broth and cook ( stirring occasionally) about 3-5 minutes ( until the cabbage wilts) Add ham, butter and sage and stir well. Spoon over cooked pasta.
Serves 2-4
*Katies Tid Bits* Try using prosciutto instead of smoked ham and it’s okay to use dry sage just use only ¾ tbsp.Not a fan of sage substitute basil

I don’t do sage, or basil, however, with the elimination of that ingredient, this looks great! And, I have the everything available to make it!

This looks delectable! I’m so glad that I found Dreamfield’s noodles….now hubby and I can have pasta dishes again. We had to mark them off our list before, since we control our blood sugar with our diet. This is one recipe I shall try!
