Fish and Chips
I hope all of the Mothers and Mother figures had a wonderful weekend! I had a lovely Mothers Day starting with breakfast made by my sweet hubby and then working in the garden. We had a nice barbeque dinner at our daughters house, then our niece stopped by with her sweet new baby boy. It was a terrific day . Before I get started with the recipe for today I would like to apologize to all of the Thursday Favorite Things Blog Hop linkers. I haven’t made it to your blogs yet. I am sorry, Life sometimes requires time away from the pc. I will do my best to get caught up, and to visit you when you link up this week. The other night my darling husband had a craving for fish and chips. So that means fish and chips for you today too.
What You Need
1 ½ Lbs. Cod loin or thick fillets ( or other white fish, bass, tilapia, etc. your choice)
1 Cup flour
1 tsp Baking powder
1 tsp Salt
1 tsp Pepper
1 Cup milk
1 Egg
1 Cup olive oil ( not extra virgin)
1/4 Cup vegetable oil
Large Non Stick Skillet
Paper towel lined plate
Potatoes (for fries, or prepackaged fries)
Medium bowl
Large spatula or slotted spoon
Thermometer ( to maintain oil temp)
Before You Start: Prepare your fries, or bake according to package directions. While they are cooking make the fish. See below for simple fry making (chips)
Lets Make It! In a bowl combine flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is combined and the batter is smooth. Let the batter sit on the counter for about 15 minutes. Heat oils in a skillet over medium high heat until it reaches 350 ° ( use your thermometer to maintain temperature) Dip fish in the batter and let excess drip back into the bowl, dip again and assure fully coated and place in hot oil and brown for about 5 minutes on each side ( until golden brown) remove from oil using a slotted spoon or spatula and place on paper towel lined plate. Serve with hot chips (fries)

Katies Tid Bits– Make your own chips ( fries) you need 4- large potatoes, peeled and cut into fries, place in a bowl of cold water, Heat oil to 350° in frying pan, dry potato strips and place into hot oil and cook until golden, remove from oil with slotted spoon or spatula and place on paper towel lined plate.
What kind of fish do you like to use for fish and chips?
I adore fish and really could eat it every day of the week, hubby not so much although he will eat cod. I like bass, crappie, trout, you name it. I also am a catfish lover. To me it doesnt matter although I tend to like the ‘fishier’ fish rather than the mild but I dont discriminate when it comes to eating fish.

Mexican Restaurant over the weekend, and gave me a lovely card.
This is one of my favorites, Katie. I went to a barbeque last weekend and was served a large chunk of cod that had been prepared in an outdoor cooker. It was delicious. I could eat fish every day of the week and be ecstatic!
