Easy Cheesy Chicken
Easy Cheesy Chicken-
When you are short of time this easy cheesy chicken recipe will taste like you cooked for hours. But, it only takes about 20 minutes. If you are on a restricted diet, swap equal parts dairy free. Please see my Katies Tid Bits below the recipe for other ingredient options. Grab a big bowl and lets dig in.
What You Need
1 Lb. Ground chicken*
1 Cup frozen peas and carrots (thawed)
1/4 Cup corn (thawed) optional
3/4 Lb. Mini seashell pasta *
11/2 tsp. Katherines Everything Seasoning
Salt and pepper to taste
½ tsp. Fresh garlic (crushed)
3 Tbsp. Canola oil*
¼ Cup milk *
1 Cup cheddar cheese (grated) medium or mild, more for garnish optional
¼ Cup fresh parsley (minced) optional
Nonstick skillet with lid (not frying pan, you need it to be about 3 inches deep)
Pasta Pot
Colander
Before You Start- Prepare pasta according to directions, drain, run under cold water and set aside.
Lets Make It!
In a skillet over medium heat add oil, garlic and ground chicken. Cook stirring occasionally until chicken is completely cooked through. Do not drain, add vegetables, and stir to combine, add Katherine’s Everything Seasoning, salt and pepper, drained pasta, stir to combine. Reduce heat to low and cover with lid and continue cooking until everything is cooked through. Remove lid and stir in milk, you may need a bit more if is it is thicker than you like, and cheese, let cheese melt then serve. Top with more cheese or parsley (optional)

Use turkey instead of chicken
Use elbow pasta instead of sea shell pasta
Use any vegetable oil (not olive oil) instead of canola
Use buttermilk instead of regular milk
