Sweet and Spicy Deviled Eggs
With Easter just a few days away chances are pretty good that you are about to have a whole lot of hard-boiled eggs. We like deviled eggs, but most recipes call for mustard (Yellow or Dijon), mayonnaise and pickles or relish. My restricted diet can make recipes challenging. But, I think you will like my simple sweet spicy deviled eggs, they are easy to make and use very few ingredients. If you are not on a restricted diet you will like this recipe too. Please note this recipe requires overnight refrigeration.
This is a migraine safe and low sugar recipe. Please read the ingredients and know your triggers and allergies before making any new recipe.
Sweet Spicy Deviled Eggs
What You Need for the Mustard
2 Tbsp. Dry mustard powder
2 Tbsp. Water
1 tsp. Distilled white vinegar
1 Tbsp. Sugar, honey, sugar substitute,brown sugar, brown sugar substitute (your choice)
Whisk or immersion blender
Ceramic, glass or plastic bowl with lid (don’t use a metal bowl)
Let’s Make It Mustard!
Whisk together all ingredients until creamy, cover and refrigerate overnight.
What You Need For Deviled Eggs
6 Large eggs hard-boiled and sliced in half Note-I use the Egg-Perfect Heat Sensitive Color Changing Egg Timer (part of my must have kitchen gadgets) to hard-boil my eggs to perfection. Or add eggs to saucepan, fill with cold water, until eggs are covered, cook on medium high heat until a rolling boil (seriously bubbling) is achieved. Remove from heat and cover, let sit for 10 minutes. Drain and add cold water ( to stop the cooking). Peel and slice in half, you want bright yellow egg yolk not grey.
Prepared mustard
Paprika or chili flakes (to taste and optional)
Whisk
Bowl
Spoon
Piping bag (optional)
Lets Make It!
Carefully scoop out the yolk of the egg and add to a mixing bowl. Smash the yolks with a fork or whisk. Add prepared mustard and whisk until creamy. Scoop into a piping bag and fill each empty egg half. Top with chili flakes, paprika or nothing at all.
