Jiggly Jello
Oops.. this was supposed to post this morning. Sorry…One of the many foods Utah ( where I live) is known for is…. jello anything…also tater tot anything, funeral potatoes ( I shared them Here), fry sauce..oh wait let’s stick to the jiggly jello. When we moved to Utah I had my first taste of a jello salad it was orange, it was jiggly and it had carrot shavings throughout. I remember questioning why anyone would think to put carrots in it, and I don’t believe anyone knew why they did it, just that they did.
It is a state holiday here next week ( pioneer day on the 24th) and many are celebrating this weekend. I can guarantee you there will be plenty of creative jiggly jello recipes to pass around. I thought if you felt adventurous this weekend you might like to try your hand at some jiggly jello anything for yourself. Simply Recipes shared her classic Sunshine Salad on Pinterest, this is similar to the one I had. But I don’t remember there being any pineapple, just carrots. Truth is, I may have blocked it out…the whole carrot jello experience may have overrun my teenage brain.
