2 Easy Egg Recipes You Will Want to Make Now
Hello Friends, are you hungry? Is it time for breakfast? How about some eggs! I had a cookbook once called 100 Egg Recipes. I looked for it in my cookbooks and sadly I couldn’t find it. I have a nice tidy cupboard that holds my cookbooks so finding a cookbook is usually very easy. Still no luck. When I do find it I’ll update this post or make it a part 2 (smile). Today I am sharing 2 ridiculously easy egg recipes you will want to make now. Quick easy and perfect for a Saturday morning breakfast. Enjoy.
One of my favorite egg recipes isn’t a recipe at all really, just a simple “dippy egg” with some toast soldiers on the side ( toast cut into strips). But, I’ll share my method for making the perfect soft boiled egg.
Place the egg in a saucepan with enough cold water to cover about an inch above the egg. Bring to a boil, then reduce heat to medium and let simmer for three minutes. Remove quickly and place in an egg cup. Add a piece of toast buttered and cut into strips (toast soldiers) for dipping into the egg yolk.
Hubby and I love eggs and asparagus together, eggs benedict is a favorite for us. I use English muffins instead of toasted French bread. Hubby has his with Canadian bacon. Steam your asparagus before you make the hollandaise sauce. My easy peazy hollandaise sauce recipe is below.
What you need for the sauce only
2 Eggs divided (yolks only)
1/4 tsp. Salt (optional)
1/4 tsp. Distilled white vinegar ( or you can use lemon juice instead)
1/4 tsp. Chipotle powder (cayenne or your favorite chili powder)
1/4 cup butter (melted)
Microwave
Microwave safe bowl
Whisk
Before You Start-
Melt butter and set aside to cool, poach two eggs, steam asparagus and toast and butter English muffins
Let’s Make It!
In a microwave safe bowl combine egg yolks, vinegar, salt, and chili pepper whisk together until smooth. Slowly drizzle melted butter into the egg yolk mixture continue whisking. Heat in microwave for 15 to 20 seconds and whisk again to make it smooth.
To create the Eggs Benedict– Add prepared asparagus to plate and then, layer Canadian bacon, ham or just the poached egg onto buttered English muffins and slowly pour the sauce over poached eggs and asparagus.

My dad used to make soft boiled eggs for me all the time when I was a kid as I just loved them. But I haven’t had in years to be honest. Probably because I ever had a surefire recipe to make them the right way before. But definitely going to give your advice and recipe a try now.
