Air Fried Grits and Thoughts on March
Hello friends, a couple of weeks ago, wow where does time go? I mentioned I would try my fried grits recipe in the air fryer. I did, and it took about 4 minutes on each side. You can see the results in the photo below. I didn’t change anything in the recipe itself other than spritzing with a little canola oil on the air fryer basket and the tops of the grits.
The air fried grits were just as crunchy as the oil fried, but not as firm. A few of them crumbled a bit in the air fryer. But it didn’t stop us from eating them. (smile) Right side is air fried.
Thoughts on March
Our boy Izzy had a birthday on the 3rd. I can’t believe he’s 10 years old. We love him so much!
This time of year has me looking forward to continuing the great purge, and of course, spring cleaning. Although that’s still a few weeks away. I’m sticking with the 2 year rule for my purge. If it hasn’t been worn, used or looked at in 2 years it’s being donated, or sold ( I’m still selling my teacup collection). I find myself thinking a lot about the flower garden, and the not to hot, not to cold weather. Spring is the season of new growth.
Did you know March is Women’s History month? It is a celebration of women’s accomplishments that have made significant changes, discoveries and contributions. You can read about it HERE
Saint Patrick’s Day is on the 17th, and here are a few more dates to add to your calendar this month.

- March 13th is one of my least favorite days- Daylight Savings Begins remember to spring forward one hour.

- March 27th starts spring cleaning week
- March 28th is Something on a Stick Day
We won’t be planting anything yet, we still have snow on the ground and another storm is on the way. My spring daffodils, crocus and tulips are peeking through the snow. The flowers in our garden have been very confused by our crazy weather.

Please take a moment to pray for the people in the Ukraine, and those in Russia who are protesting ( even though they know they may face dire consequences). Pray for all of the countries that are welcoming the refugees, and the people who are welcoming the Ukraine refugees into their homes. Pray for those who are sending money and supplies that it all arrives and is used properly. side note-please verify you are donating to a legitimate place, like the red cross. Pray to stop the insanity of it all. Pray for Peace.

So sorry about your fall, Katherine. I am turning 78 on Mar. 17th and have lost a lot of stability over the last couple of years due to illness and being semi-bedridden. I have fallen a couple or three times over the last several years so I am constantly trying to be extra careful and avoid another tumble. It sure does jar everything in your body when you hit the ground. I’m glad you are getting a new bath mat with better grip. I probably should, too. Take care and my wishes for a speedy recovery.

Ooh, I love grits, so I would probably love them air fried. (I am still shopping for an air fryer!) Aw, what a cute pic of Izzy. Happy birthday to him. 16 year old Sunny says he’s just a pup! 🙂 I hope you’re having a feel good day. xo

I must admit, I’ve never heard of air-fried grits. I bet it’s delicious. Happy Birthday to Izzy! He’s looking quite young and chipper at the ripe old age of 10.
