Royal Mac and Cheese
It’s time for meals on Monday, and today’s recipe is a fun Valentine’s dish ( Valentines Day is tomorrow)! If you are not a lobster fan this recipe is terrific with shrimp too. It’s easy to make and doesn’t take much time to prepare either. Today feel like royalty and try my grown up Royal Mac and Cheese.
What You Need
3/4 to 1 Lb Lobster ( cooked and cut into small pieces)
1 Lb pasta
6 Tbsp unsalted butter (melted)
2 Garlic cloves (finely chopped)
1/4 Scallions (finely chopped tops and bottoms)
1 /4 cup white onion ( finely chopped)
1/4 Cup flour
3 Cups milk
1 1/2 cups Mozzarella cheese (grated)
1 1/2 cups mild white cheddar cheese (grated)
1 tsp Spicy mustard ( optional)
Salt and pepper (to taste)

Before You Start: Cook pasta according to package directions. Drain and rinse with cool water, set aside. Melt butter ( I just use the microwave and a microwave safe dish takes about 20 seconds.
Lets Make it! Add butter, garlic and white onion to a saucepan and cook over medium heat until onion is softened ( about 5 minutes). Add flour stir with whisk and cook for about one minute. Add milk, whisk together and bring to a boil, whisking often. Reduce heat to medium-low, and simmer about 3-5 minutes until sauce is smooth and thickened. Remove from heat, and add cheese, scallions, mustard, and salt and pepper. Whisk together. Add lobster and stir with a spoon to combine. Cook on low stirring often ( to heat lobster all the way through) about 3-5 minutes. Garnish with chopped scallions if desired
Serves 4
Katies Tid Bits * Try this recipe with different cheeses! If you like a crust on your mac and cheese. Pour it all into a prepared ( greased or non stick spray) 3 qt baking dish and sprinkle with cracker crumbs, bake for about 15-20 minutes at 350°
