Cream Puffs
A classic dessert recipe perfect for Meals on Monday.One of my very favorite treats, Cream Puffs!
What You Need
1/4 lb. butter ( unsalted)
1 Cup boiling water ( see before you start)
1 Cup flour (sifted)
3/4 tsp. Salt
6 Eggs (2 eggs, lightly beaten and set aside)
1/3 C flour
1/2 Cups sugar
2 Cup milk
2 tsp. Vanilla
1/4 Cup powdered sugar ( for dusting)
Nonstick cooking spray
Saucepan
Baking sheet
Wire cooling rack
Before You Start: Preheat oven to 450°, put water in saucepan and bring to a boil over medium high heat. Spray baking sheet with nonstick cooking spray, Sift flour.
Lets Make it! For the puffs– add butter to boiling water until it melts, add flour and salt and stir to combine. Cook, stirring vigorously until mixture is smooth and forms a ball. Cool slightly (about 3-5 minutes). Add 4 eggs, one at a time, beating vigorously after each egg is added. Beat until mixture is smooth. Drop batter onto cookie sheet to form the size of cream puff you want ( about the size of a large meatball). Bake for 15 minutes. Then lower temperature to 325 degrees and bake for 25 minutes, cool on wire rack. For the filling– in a saucepan mix flour, sugar and salt and slowly stir in the milk. Cook over medium high heat, stirring often until it comes to a boil. Let boil for about two minutes. Stir a little of the hot mixture into the bowl with the beaten eggs, then add all to hot mixture. Continue stirring until thickened, add vanilla, mix well. Let cool slightly. Split puff open and then using a spoon fill puffs .Let cool and sprinkle with a little powdered sugar.

Katies Tid Bits* try melting a bit of sweeten milk chocolate and drizzling over the tops instead of the powdered sugar. Want it it quicker? Use your favorite pudding as the filler ( use a bit less milk so it is a little thicker)

My husband LOVES eclairs so we make these a lot. The only thing I do differently is with the chocolate on the top. I always thin the chocolate with a bit of cream so it drools down the sides all pretty like. 🙂
