Tomatillos Salsa
Tomatillos Salsa-
This year we are growing tomatillos in our veggie garden. Hubby and I both enjoy tomatillos salsa (salsa verde.) But, when I received my diagnosis we thought I wouldn’t be able to enjoy salsa anymore. I just saw that as a challenge and I created this migraine safe salsa recipe the other day. Hubby and I both really like it. I think you will enjoy it to. You can use it in recipes that call for salsa also.

What You Need
1 1/2 -2 lbs. Tomatillos (husks removed, cleaned and sliced in half)
3 Cloves garlic (crushed)
1 Cup Green onions (tops and bottoms chopped) about 6 large or 10 small
1 4 oz. Can Jalapenos (diced) you determine the “hotness” ours is hot!
1/4 Cup parsley or cilantro (chopped )
2 tsp. Sea salt (kosher salt)
1/4 tsp. Distilled white vinegar
Saucepan
Colander
Food Processor (or blender)
Lets Make It! Combine tomatillos, green onion, garlic and jalapenos in saucepan. Fill the saucepan with enough water to cover the contents. Bring to a boil over medium high heat. Boil for 2 minutes reduce to low and simmer 15 minutes (until tomatillos are soft). Remove from heat and pour into colander. Leave in the colander for about 15 minutes to cool. Add tomatillo mixture to food processor/blender. Add parsley, salt and vinegar. Pulse 3-6 times until salsa reaches your preferred consistency. We like ours with small chunks.
Makes about 2 Cups
Katies Tid Bits* if you are not on a migraine safe diet, use white onion instead of spring onions and 1 Tbsp. lime juice instead of vinegar.

I love salsa verde! We got some tomatillos in our produce box a couple of weeks ago and I made a roasted tomatillo salsa. Yum.

I use it in place of salad dressing…lower calories and adds much flavor!
