Baked Blueberry Scones
I haven’t made this baked blueberry scones recipe in years and now I can’t wait to make it with fresh blueberries from my new blueberry bush. This is not a traditional recipe it’s one I created out of necessity when I could no longer have sugar. This recipe is a migraine safe, low sugar and lactose free. If you are not on a restricted diet please see Katies Tid Bits* below. You can wrap each scone individually and freeze. Then just pop one in the oven for a treat with breakfast or any time. If you keep them wrapped well or in a freezer safe container they can stay in your freezer for up to 6 months. Although mine never make it that long ( wink).
What You Need
3 Cups Bisquick *
1 ½ Cup sugar substitute, I use Splenda*
3/4 Cup – Lactose free margarine*
2 Large eggs
1⁄4 Cup lactose free milk (I use lactaid)
1/4 Cup applesauce (no sugar added)
1 ½ Cup blueberries (cleaned and dried or use frozen, thawed)
Baking Sheet
Large mixing bowl
Medium mixing bowl
Whisk
Rubber spatula
Parchment paper
Wax paper
2-3 tsp. All-purpose flour (for work surface)
Before You Start-Preheat the oven to 400 °, line baking sheet with parchment paper, tear off about 20 inches of wax paper and place it on your work surface, dust with flour.
Lets Make It! In a large bowl, combine Bisquick and Splenda and margarine, using a fork or whisk , mix until the margarine resembles little peas. In a medium bowl add eggs, milk and applesauce and whisk until well combined. Add wet ingredients into dry ingredients slowly, using a fork or whisk, mix until combined (do not over mix). Using a spoon or rubber spatula gently fold in the blueberries. Turn the dough out onto the prepared floured wax paper, using the palms of your hands gently pat the dough pushing it outward to form an oval/square or circle, pat the dough down gently until it is about 3/4-inch thick. Grasp the corners of the wax paper and lift and flip the scone dough onto the prepared baking sheet. Bake on the center rack until golden brown (about 20-25 minutes) and a toothpick placed in the thickest part comes out clean. Remove from oven and let cool on the baking sheet for a couple of minutes, cut into triangles and serve warm with honey, butter or margarine poured or spread over the top, it will go into all of the wonderful cracks and craggy places.
Serves 6-8
Katie Tid Bits* If Bisquick isn’t available in your area you can make a similar mix by sifting together 1 cup of flour, 1 1/2 tsp baking powder,1/4 tsp salt. If you are not on a restricted diet replace Splenda with sugar, lactose free milk with buttermilk, margarine with unsalted butter.

Hi Andrea! About 90 percent of my recipes are for restricted diets ( but can be easily changed for others) I’m like you and blueberry always gets my attention. I am the same with strawberries. We are two peas in a pod. I hope you will enjoy this recipe as much as we do. Hugs
