Salmon Alfredo
Over the past couple of months it has been necessary to limit my time in the kitchen. It’s just not safe until my medication has me stabilized. Fortunately I have had only two incidents in the kitchen and they were several weeks ago. What is a recipe creator supposed do? I passed my whisk to my sweet hubby and he has been cooking a lot ever since this all started. One thing I always enjoy is breakfast for dinner and my hubby can cook a delicious breakfast like a rock star! I am now stepping back into the kitchen (under the watchful eye of my hubby) and keeping my recipes and cooking simple. I recently made this easy and delicious Salmon Alfredo. It is great for dinner or for lunch. If you are not on a restricted diet please see Katie’s Tidbits below.
What You Need
16 oz linguini or fettucine pasta (uncooked)
6-8 ounce cooked Salmon (cut into bite size pieces)
3 Tbsp. canola oil *
3 Tbsp. all-purpose flour
¼ Cup chicken stock ( or vegetable stock)
2 Cups lactose free milk (or soy milk)*
2 Cloves garlic (crushed)
1 tsp salt ( optional)
2 tsp White pepper
1/4 tsp Nutmeg
Fresh chopped parsley for garnish (optional)
Pasta pot
Colander
Medium sauce pan
Whisk
Large serving bowl.
Before You Start- Bring pasta water to a boil and prepare pasta according to package directions.
Lets Make it! While the pasta is boiling, heat oil in saucepan over medium high heat; add garlic and sauté until soft. Add chicken stock and milk and stir to combine. Gradually add flour a little at a time and whisk well to keep from lumping. Add salt, pepper and nutmeg. Stir to combine. Bring to a simmer and add salmon. Reduce heat and cook long enough to heat the salmon (about 10-15 minutes) and thicken the sauce.
Drain pasta through a colander. Add pasta to large serving bowl, pour salmon Alfredo sauce over pasta and stir to combine. Garnish with parsley and serve.
Serves 2-4
Katies Tid Bits* if you are not on a restricted diet-Add 1 cup of grated Parmesan cheese to sauce at the same time you add the milk. Use ½ cream and ½ milk .Use olive oil. Substitute white wine instead of stock. Sprinkle with fresh Parmesan cheese before serving.

This is a plate of perfect creamy dreamy comfort food and fast too, love that part especially. Pacing yourself is the most important part, take it easy…but glad to see you back at it a little bit at a time.
