How to Put Fruit Inside Baked Goodies-
You know all of those delicious fruit filled goodies you see on pinterest or in magazines. I thought it would be fun to share how I put fruit inside baked goodies. You know I am not a baker, but once in a while I like to make something sweet for my hubby and our family. I like putting fruit in recipes it’s a little surprise yummy in the middle. If you remember my cranberry loaf recipe, or my peaches and cream dessert you know I put fruit inside both of them. So I hope this will not be redundant for those of you who are regular readers. Maybe it will encourage you to put fruit inside your baked goodies.
Whether you start from scratch or use a boxed cake mix the process is the same. If you would like to make a cake from scratch I invite you to read my Bake from Scratch post. I found some beautiful fresh strawberries at our local market. I always look forward to picking fresh strawberries from our garden though. If you can’t find fresh strawberries, you can use frozen if they are thawed completely. Dab with tea towel or paper towel to keep the moisture from thawing them out of your recipe. Fresh strawberries need to have the tops removed and will need to be washed and dabbed dry also.
Remove about a quarter of a cup of dry ingredients and set it aside, prepare your batter according to directions. I used a simple yellow cake recipe for the cupcakes. After I filled the cupcake lined cups half full I lightly rolled my strawberry in the dry cake mix (that you set aside earlier) and placed the whole strawberry into the center of the batter, repeat with each cupcake, then spoon the remaining batter over the top of the strawberries until covered and bake according to directions.
Remove you fruit filled baked goodies and let cool. I dusted these with some powdered sugar and then all you have to do is take bite or cut down the center. There it is, a yummy strawberry inside, Taa Daa!
Okay so now you’re saying, hey Katherine, we don’t want a cupcake; we want a bundt cake or sheet cake. I hear you and the process is basically the same with just a bit of a twist. Gently fold the coated berries into the batter. That’s it. Now you don’t have fruit all settled to the bottom of your baked goodies.
