Years ago my sweet hubby baked me a sugar free carrot cake for my birthday. It was a kind and loving gift and it was truly appreciated. But, unfortunately it didn’t taste very good. Even though it was baked with love I had to eventually stop eating it. Years later I told him the love that baked the cake was amazing, but the cake wasn’t. Today is my birthday and I have it on good authority I will be eating sugar free blueberry muffins after dinner. One of my favorite treats and a must have on my birthday Menu. For my birthday post I decided to have a bit of fantasy. I imagined a diet with no restrictions and this is my “only in my dreams” birthday menu.
Breakfast- Pancakes covered in butter and straight from the tree, maple syrup. Oh and bacon, oh yes there would be bacon!
Lunch- a mushroom burger with fries and special sauce from our local Crown Burger. Oh my goodness, I’m drooling just thinking about it. The best fries in the world, yes they are that good!
Dinner, corn tortillas filled with chicken and cheese. Yellow rice and tons of salsa and chips!!
For my birthday cake, carrot cake with cream cheese frosting, or German chocolate cake with coconut frosting and a tall glass of milk over ice (do you drink your milk over ice?) I used to love it that way.
After the evening slows down, a glass of Riesling, over ice. I like my wine, like I like my milk, frosty.
