Saturday Sharing

Hello sweet bloggy friends, happy weekend wishes and welcome to Saturday Sharing! I hope you are smiling,safe and warm while reading this. The weather ( everywhere but here) is causing a lot of chaos so it’s a nice weekend to stay cozy and maybe bake some cookies, read a good book or read a blog ( wink). Here’s a tried and true recipe for White Chocolate Macadamia Nut Raisin Cookies recipe you will love.

What You Need
1 Cup light brown sugar (packed)
½ Cup sugar
1 Cup unsalted butter or margarine (softened)
1 tsp. Vanilla extract
1 Egg
2 ½ Cups all-purpose flour
1 tsp. Baking soda
¼ tsp. Salt (optional)
1Cup white chocolate (small pieces or chips)
¼ Cup chopped macadamia nuts
Large bowl
Electric mixer
Wire cooling rack
Baking sheet
Parchment paper
Nonstick cooking spray

Before You Start-
Preheat oven to 350° and line baking sheet with parchment paper and lightly spray with nonstick cooking spray.

Lets Make It!
In a large bowl add sugars, butter, vanilla and egg and beat with an electric mixer until light and fluffy. Stir in flour, baking soda and salt (dough will be stiff). Using a fork or spoon stir in white chocolate and macadamia nuts.

Drop dough by rounded tablespoonful’s about 2 inches apart onto prepared cookie sheet. Bake 10 to 15 minutes (or until light brown). Let cool on cookie sheet for 2 minutes then remove from baking sheet onto wire cooling rack.
Makes about a 12-16

 

There is a whopper of a flu running amuck here in the US, if you haven’t received a flu shot it is my understanding that you can still get one. A little reminder to wash your hands often and stay home if you are ill ( except of course going to your health care professional).
