Hello friends, can you believe the 4th of July (Independence Day in the US) is just a few days away? The blistering heat here in Utah makes it hard to forget summer, the real Utah 100°F + days of summer, are only beginning. Soon the heat will keep me inside. But, until then, lets plan a 4th of July menu you can enjoy inside or outside. Side note-if you’re a bring on the heat summer person ( or anyone planning to spend time outdoors in the heat), enjoy. But please stay hydrated and wear sunscreen. This has been a public service announcement from the Katherines Corner Network ( giggle).
Lets start with Breakfast.
Top your oatmeal with blueberries and strawberries ( yes there really is oatmeal in there.)
A salad filled with fresh veggies is always a good choice. It won’t make you feel overfull so you will still have plenty of energy for playing games, swimming and other activities. Add this red white and blue potato salad to your 4th of July menu. I found it on Food Network!
